Amelia, of Amelia’s Homemade Carrot Cake is one successful example of home chefs emerging during the Circuit Breaker period- this home-based business already has more than 4000 followers on Facebook. While working from home during the CB, she made the carrot cake for her son and soon friends and family started requesting more. REVIEW TIME
We tried the carrot and pumpkin flavors, and am glad to give them a thumbs up!
We liked the homemade and wholesome taste of the carrot cakes. We enjoyed the generous amount of ingredients like radish strands, dried shrimp, mushroom & Chinese sausage. Each mouthful was a medley of textures and flavors.
Stored in airtight container, the cakes can keep in the fridge for up to 3 days or in the freezer for 2 weeks (note: keeping in the freezer, texture will change a little)
You can choose to either steam or pan-fry. I chose to pan-fry for that extra kick from the lightly-charred skin.
My favorite of the two is the carrot flavor as I felt the taste of the individual ingredients came together better in this version.
Amelia’s homemade carrot cake would make a good breakfast, or perhaps a teatime snack to reward yourself in between zoom calls on your wfh days.
