LeVeL33 and Carlitos Casa de Comidas are teaming up for a one-day-only dining experience this June, presenting a Brewery-Inspired Spanish Brunch set against the skyline of Marina Bay. Taking place on Saturday, 13 June 2026, the collaboration brings together Spanish tapas culture and LeVeL33’s brewery-driven dining philosophy in a shared free-flow brunch experience.
Held from 12pm to 3pm at LeVeL33, the brunch is priced at S$88++ per guest for free-flow food, with an optional S$78++ add-on for free-flow beverages. Guests can expect an afternoon of tapas-style dining, craft beer, and live Latin-inspired music, all framed by panoramic views of Singapore’s city centre.

The collaboration is led by Executive Chef Jake Kowalewski of LeVeL33 and Barcelona-born Chef Carlos Montobbio of Carlitos Casa de Comidas, with both chefs presenting a curated selection of five dishes each. The concept brings together brewery-inspired cooking techniques and authentic Spanish flavours, designed around sharing, social dining, and a relaxed flow of food and drinks.

LeVeL33 showcases its ContemBrewery approach with dishes such as Gambas al Ajillo served with beer flatbread, Beer Battered Padrón Peppers with smoked garlic aioli, fried chorizo and chives, alongside signature items like Charcoal-Grilled Fremantle Octopus and Westholme Wagyu Petite Tender. Dessert comes in the form of Housemade Spent Grain and Wheat Beer Churros served with stout chocolate espuma.
From Carlitos, Chef Carlos Montobbio brings a more traditional tapas bar sensibility inspired by the streets of Barcelona. Highlights include Tapa de Paella featuring secreto ibérico and padrón peppers, Gilda Pintxo with Spanish anchovy and pickled onion, Croquetas de Chipirón made with baby squid and squid ink, Mollete de Sobrassada with paprika pork sausage and burrata, and Tarta de Queso, a burnt Basque-style cheesecake tart served with raspberry and chilli jam.
The free-flow beverage programme complements the menu with LeVeL33’s freshly brewed craft beers including Blond Lager, IPA and Stout, alongside White Sangria, Vermouth Bianco, Aperol Spritz with Cava, Spanish wines, and a selection of juices, coffee and tea.
Chef Carlos Montobbio shared that the collaboration reflects his personal approach to Spanish cooking, saying it is inspired by “honest food made for sharing, long conversations and enjoying time around the table.” Chef Jake Kowalewski added that the pairing of Spanish tapas and brewery dining felt natural, as both cultures are built around food, drinks and communal dining experiences.
Set high above Marina Bay, the one-day brunch brings together the energy of Spanish tapas culture and the creativity of brewery-inspired cuisine, offering a relaxed afternoon of food, drinks and conversation against one of Singapore’s most iconic skylines.
