I went down to try Cat & the Fiddle’s new molten Basque cheesecake after hearing that its Tampines 1 concept store had just opened. I’ve always known the brand for takeaway cheesecakes, so the idea of eating one fresh out of the oven was enough to get me there.

I expected a good cheesecake, but what I found was easily one of the most indulgent cheesecake experiences I’ve had in a while. What really sold me was knowing that the molten cake is baked fresh every 15 minutes. Each time a new batch is ready, a staff member calls it out in-store, and you’ll see trays of piping hot, jiggly cheesecakes coming straight from the oven. Quantities are limited each round, so you have to keep an ear out if you want one at its freshest.


When the cake arrived, the top was beautifully caramelised, and the moment I dug my spoon in, the centre flowed into a molten, creamy pool. I was introduced to five easy ways to enjoy the cheesecake, all of which you can try at home. Pairing it with salty crackers was my favourite, as it balanced the richness and made it feel almost like a dessert version of cheese fondue.

For a creme brulee-style finish, sprinkling sugar granules on top and torching it gave the surface a crackly caramel layer.

Other suggested options include adding a scoop of vanilla ice cream for contrast or pouring espresso over it for a Basque cheesecake affogato. At just $15 during the opening promotion, this feels like seriously good value for something so generous and freshly made.
Beyond the classic version, new flavours are being introduced for the molten cheesecake. Strawberry, raspberry, matcha, dark chocolate, and yuzu are already in the lineup, each packed with strong, distinct flavours while keeping the molten centre perfectly gooey.
One pairing that genuinely surprised me was the Dark Chocolate Sea Salt Cookie. It’s generously sized, deeply chocolatey, and comes with a cream cheese surprise in the centre. You can dip it into the molten cheesecake for an indulgent mix of saltiness and rich cocoa, or enjoy it on its own as a decadent snack.



If you’re not all about sweets, Cat & the Fiddle’s new Italian-style sandwiches are worth trying. They are made with thin, soft Tuscan schiacciata bread and filled generously with fresh ingredients. There are currently three flavours, Turkey Ham, Honey Baked Chicken Ham, and Beef Pastrami

I tried the Beef Pastrami and found the balance of bread, cheese, and meat just right, with the bread staying soft while still giving a light crunch on the edges.
