Created by Executive Pastry Chef Daniel Windelhed, the menu feels like more than just a theme. I had a short chat with him, and he shared that this afternoon tea is essentially his Swedish upbringing in food form. Knowing that makes the experience feel more meaningful, and you can really tell he poured his heart into every single item.

The tea begins with a zesty orange welcome cocktail that instantly wakes up your palate. Following the citrusy start, the appetiser is a Kalix Löjrom tart that looks as good as it tastes. The glittery caviar sparkled under the light, while pickled onions, chives and Gruyère cream cheese made each bite burst with flavour.

As per Chef Daniel’s recommendation, we started with the savoury toasts. here are four in the set, and each one was a treat. The roasted beef toast came with crispy onions, horseradish and cucumber, and tasted like a mini burger. The blueberry cured salmon toast came with gravlax sauce, capers and vegetables, and was clean and not fishy at all, making it easy to enjoy. The Skagenröra toast was served with shrimp salad and caviar. It was generously packed with ingredients, where each bite felt indulgent and satisfying.

The herring toast was the most unique for me. Herring has been a staple in Swedish cuisine for centuries, and this toast, topped with chives, mustard seeds, egg yolk cream and pickled onions, felt like a little piece of Sweden on a plate. Slightly fishy but familiar, it gave the set an authentic Nordic touch that I really appreciated.

Moving on to the sweets, the essence of fika really comes through as you slow down and enjoy each bite. The Summer Tart with strawberry and rhubarb compote was bright, fresh, and not too sweet, instantly reminding me of summer. The blackcurrant dessert was a highlight of the experience. Cracking into the glossy black ball revealed a creamy mix of cream cheese mousse and chocolate sponge, and each bite was surprisingly light and refreshing.

The warm cinnamon bun was soft and pillowy, with a subtle almond filling that complemented the gentle cinnamon perfectly. Lastly, the Flødeboller, a little marshmallow droplet coated in chocolate, was a playful and fun bite.

We ended the hightea with the Swedish Princess cake. Covered in smooth marzipan, with a layer of raspberry jam and diplomat cream inside, it is an iconic and beloved Swedish staple. Light, subtly sweet, and beautifully presented, it was the perfect finale to the tea.

The Nordic Afternoon Tea also comes with specially crafted cocktails, each priced at $27. The Viking Mule is spritzy and refreshing, made with aquavit, fresh lime and ginger beer. Spice Stream is aromatic and colourful, with aquavit, vodka, white wine, spices and carbonated water, offering a flavourful twist. Lastly, the Nordic in Var is a showstopper, a bright yellow drink with aquavit, elderflower, suze and bianco vermouth, topped with two cute heart-shaped citrus peels.
