[Review + Promo Alert] Hathaway Autograph Presents Modern Southeast Asian Flavours in an Elevated Setting at Varel Singapore

Located at the newly launched Varel Singapore, Hathaway Autograph unfolds as an inviting dining space crafted by award winning FDAT Architects. The interior features a soaring dining room framed by verdant terraces overlooking the Selegie and Mount Sophia enclave, offering a chic yet comfortable atmosphere.

Led by Executive Chef Kenneth Loke, whose decades of international experience include representing Malaysia at the prestigious Bocuse d’Or Finale in Lyon, the kitchen brings a modern precision to heirloom recipes. While not halal certified, the menu entirely skips pork and lard, allowing the spices, herbs, and regional ingredients to be accessible to a wider audience.

We were recently invited for a dinner tasting for two and below are some of their signature items which we savoured.

For beverages, we started with an alcoholic Gin Tonic and a hot cup of Earl Grey Tea.

Our tasting began with a series of smaller plates designed to awaken the palate.

The Heritage Kueh Pie Tee with Shrimp (S) offers golden pastry cups filled with slow braised jicama, carrots, succulent shrimp, and their signature chili. It is a delightful nod to Nyonya traditions.

The Otak Otak Mousse (S) is equally delectable, featuring a velvety spiced fish mousse piped into charcoal cornets and topped with golden tobiko.

Moving to brighter notes, the Salmon and Coconut Kinilaw (S) presents a Filipino style ceviche where citrus cured salmon is balanced by coconut milk, avocado, and sweet potato crisps. Sweet and savoury at the same time, this dish is the perfect starter to awaken the palate.

To round out the starters, the Chilli Crab Dips (S) paired signature spicy sweet crab sauce and egg ribbons with golden fried mantou for a satisfying crunch.

For soups, the Wagyu Buntut Broth (S) is a clear winner. This classic Wagyu oxtail elixir is slow cooked for eight hours, resulting in a comforting broth infused with nutmeg, star anise, clove, and tender root vegetables.

The main courses further showcase the impressive depth of the kitchen.

The Signature Beef Cheek Rawon (S) features Angus beef cheek that is slow braised for 12 hours in a rich buah keluak gravy layered with fragrant lime leaves.

Seafood lovers will appreciate Ah Nya’s Fish Curry (S), which sees a fresh barramundi fillet poached in an heirloom spice recipe alongside crispy okra and daun kesum.

Another classic reimagined is Hathaway’s Chicken Rice (S). This refined version uses premium AnXin chicken, serving it poached alongside rice cooked in chicken broth, cabbage, ginger scallion oil with chicken fat, dark soya sauce, and house made chili.

To complement the protein mains, the Tempe Buncis (S) is a nice vegetable addition, featuring a satisfying side of fine green beans and crispy tempeh coated in spicy sweet kicap manis.

Pairing these dishes with the Signature Blue Pea & Thai Berry Rice (S) adds both visual appeal and aromatic depth to the meal.

Desserts effortlessly bridge tradition and modern technique.

The Princess of the Straits (S) reinvents kueh puteri salat with an aromatic pengat sauce and salted gula jawa ice cream.

Alternatively, the Sticky Toffee Pudding (S) remains a personal favourite of the owner, pairing a warm medjool date cake with butterscotch sauce and Tahitian vanilla bean ice cream.
