[Review + Promo Alert] Nourish Your Soul with Twelve Hour Simmered Samgyetang at the new Modu High in the CBD

If you have ever joined the queue at Mandarin Gallery for a comforting bowl of Korean ginseng chicken soup, you will be thrilled to know that the much loved Modu has evolved. Opening its doors on 31 March 2026 at 96 Amoy Street, the brand has expanded into a grander concept aptly named Modu High.

The original Orchard outpost is well received for its comforting broths and this new flagship aims to elevate that exact experience. Though located in the CBD, the new space is conceptualised as a serene contemporary sanctuary. Warm woods, earthy terracotta tones, and lush green accents come together to create a modern Hanok inspired environment that feels calming and highly Instagrammable without trying too hard.

The philosophy here revolves around Boyang sik, a traditional Korean culinary practice focused on restoring energy and nourishing the body.

At Modu High, they take this 500 year old royal heritage seriously. The kitchen uses halal certified organic spring chickens known for their tender texture. To achieve their signature golden silky stock, they simmer the broth at a low temperature for 12 solid hours. More impressively, they use two whole birds instead of one to extract maximum natural umami, resulting in a rich body that lingers long after your meal.

During our visit, we opted for the Two Gather Set (8), which feeds two people and offers a comprehensive tasting of their menu.

The meal kicked off with a trio of intensely flavoured appetisers designed to awaken the palate.

The Honey Marinated Garlic and Ginseng offered a sweet and earthy bite, well contrasted by the tangy Steamed Eggplant with Soy Vinegar Sauce. The Tomato Carpaccio with Balsamic Vinegar added a bright and refreshing lift, preparing us for the heavier mains.

To accompany our meal, we chose the Fried Fresh Ginseng for our shareable plate.

It was actually my first time eating ginseng prepared this way, and it was a pleasant surprise. The exterior was crisp and the slight drizzle of honey balanced the natural medicinal earthiness of the root well.

For our choice of samgyetang, we selected the Yang Vitality and the Yin Nourishing bowls to experience their Yin and Yang.

These premium signature soups are fortified with specialised herbs like mugwort and peony root.

While the flavour profile does lean toward the bitter side due to the potent medicinal ingredients, every spoonful felt like a warm hug brimming with goodness.

The Yang Vitality is said to be energy boosting, featuring herbs that are curated to support liver health to boost natural stamina, while the Yin Nourishing is targeted for vitality balancing to warm the body and improve circulation plus provide support for women’s wellness.

The chicken itself was incredibly tender, easily pulling apart to mix with the glutinous rice stuffed inside.

Dessert featured Korean Honey Cookies alongside a homemade Jujube and Cinnamon Punch.

Overall, with its expanded menu of twelve samgyetang flavours and a bigger space, MODU High positions itself as a destination for Korean comfort food with a wellness focused. The flavours may lean strongly into herbal territory, but that is also part of the charm and authenticity of the dish.
