Texas Chicken Singapore is bringing a taste of bazaar and night market classics to its signature fried chicken with a special collaboration featuring renowned chef, TV personality, cookbook author, and entrepreneur Chef Bob (Shahrizal Salleh). The limited-time offering, Chef Bob’s Ayam Percik, reimagines the traditional Malay favourite for today’s fast-food audience.
Drawing from Chef Bob’s Malay culinary roots, the collaboration combines Texas Chicken’s commitment to freshly prepared chicken with traditional grilling and smoky cooking techniques.
During the development process, Chef Bob was impressed by the brand’s behind-the-scenes dedication to freshness and consistency, which inspired a series of experiments with coatings, spice blends, and flavour profiles. The result is a rich, aromatic recipe that captures the essence of charcoal-grilled ayam percik, a staple at Ramadan bazaars and night markets in Singapore and Malaysia.
The final flavour features a savory coconut milk-based glaze infused with lemongrass, tamarind, galangal, turmeric, and chillies. Chef Bob and his team also incorporated natural smoky elements to create the distinctive aroma, balancing sweetness, tanginess, and spice for a heritage-inspired fast-food experience.
We had the chance to try the Ayam Percik fried chicken ourselves, and it delivers a familiar local flavour profile distinct from the usual Texas Chicken. The marinade comes through clearly, infused with fragrant spices that evokes traditional Malay recipes. While the glaze carries a gentle heat, it remains approachable and not too spicy, making it suitable for a wide range of palates. Overall, it is a well-balanced take.
This partnership exemplifies a growing trend in Singapore where major brands collaborate with celebrated chefs to craft authentic, story-driven menu offerings.
In addition, Texas Chicken continues its annual Ramadan charity initiative, providing complimentary meals to beneficiaries such as PERTAPIS Education and Welfare Centre, reinforcing the brand’s commitment to community support and generosity during the holy month.
The Chef Bob collaboration coincides with Texas Chicken Singapore’s 16th anniversary on Texas Day, 17 April. To celebrate, the brand will offer special promotions, giveaways, and limited-edition merchandise, including a 2-in-1 vest-turned-tote bag with every meal purchase, combining sustainability with style.
