If there is one question Singaporeans struggle with almost every night, it is this: what’s for dinner?
From endless group chats to standing outside MRT stations trying to decide where to eat, the daily dilemma is something most of us know a little too well. Chef Lorenz Hoja has turned that familiar struggle into the inspiration behind a new experimental pop-up concept called What’s For Dinner?

The week-long kitchen appears once a month and keeps things intentionally simple. Instead of overwhelming diners with a long menu, each edition serves just one main and one dessert.


Each edition runs for one week and introduces a completely new menu, often with a guest collaborator. That means diners will never encounter the same dish twice, making every month’s appearance something to look forward to.


The March edition, running from 16 to 21 March, sees Chef Lorenz teaming up with Chef Pai Ling, sous chef of The Plump Frenchman. Together, the pair present their take on Korean comfort food with a seafood ramyeon that feels both indulgent and satisfying.
The Korean Seafood Ramyeon is served in a rich kimchi and beef broth that carries a bold depth of flavour. The bowl comes generously topped with onsen eggs, abalone, tiger prawns and baby octopus, making it a hearty dish that easily serves one or two diners. For those looking to elevate the experience further, a 50g portion of Japanese uni can be added on for an extra layer of briny richness.


To end the meal, the chefs present Ma’s Ice Kachang, a creative reinterpretation of the familiar local dessert. Instead of the usual shaved ice, the base is made with coconut water ice, giving it a lighter and more refreshing texture. The dessert is topped with milk agar, longan, lychee, compressed watermelon and rock melon, along with red beans. A pineapple and soursop sauce adds a bright tropical tang, while homemade vanilla sauce and dulce de leche bring a creamy sweetness to tie everything together.

For diners who want the full experience, both dishes can be enjoyed together as a set menu priced at $34++, making it an easy and satisfying dinner option without overthinking the order.
With its rotating collaborations and constantly changing menu, What’s For Dinner? offers something refreshingly different from the usual dining routine. For anyone tired of the nightly debate about where to eat, this pop-up might just be the easiest answer.
