Gibson Celebrates 10 Years with TIMELESS, A Cocktail Menu That Transcends Eras

Singapore’s iconic cocktail destination Gibson is marking a decade of drink-making excellence with the launch of TIMELESS: a brand-new menu that pays homage to classic cocktails while embracing bold, modern flavours. Ahead of its 10th anniversary this October, the bar, nestled in a charming 1930s heritage shophouse, continues to embody quiet sophistication and warm hospitality under the Jigger & Pony Group banner.

A Menu That Ages with Grace

The TIMELESS menu features dusty pink suede covers meant to wear beautifully with time, echoing Gibson’s approach to hospitality: ageless, personal, and never overdone. The interior pages are dotted with whimsical illustrations, a playful reminder that while Gibson takes its craft seriously, it never takes itself too seriously.

Creative Director Uno Jang and Assistant Principal Bartender Gabriel Gan lead the team in curating a lineup of cocktails that reflect Southeast Asian warmth and character. Each drink in TIMELESS bridges nostalgia with innovation.

The Gibson

First served in 2015 and still going strong, this namesake martini redefines the classic. Made with Roku Gin and a house-blended ginjo sake-vermouth, it’s served ice-cold at ‑15°C and garnished with a pickled pearl onion, smoked quail egg, and pickled pomelo for layers of umami and texture (best paired with oysters).

MF Martini

A modern riff on the wet-style martini, carbonated overnight for a velvety finish. This version balances No. 3 London Dry Gin and Cinzano Dry Vermouth with Cocchi Americano and orange tincture. Inspired by New York’s “Adult Happy Meal,” it’s served with a cone of crisp French fries for a playful yet indulgent pairing.

Calypso Gimlet

A zesty, tropical twist on a classic, featuring calamansi oleo-saccharum and Monkey 47 Gin. Bright, rhythmic, and refreshing.

Maharaja’s Mule

A fiery reboot of the Mexican Mule, this version combines Don Julio Blanco Tequila infused with Citra hops, old ginger, and Fernet Hunter. Topped with ginger ale foam and served in a traditional copper mug, it delivers deep, layered spice.

Gin & Tonic Bloom

This innovative serve highlights the earthy, bitter profile of banana flowerpaired with Tanglin Singapore Gin, pomelo, and banana liqueur for a unique, blooming botanical profile.

Onyx Blazer

Theatrical and warming, this signature flaming cocktail blends Monkey Shoulder Scotch with cacao, malt, cinnamon, and chile liqueur, poured over cacao tea in a dramatic tableside ritual of dancing blue flames.

Amaretto Sour Affair

Dessert in a glass. This reinvented classic features butter-washed bourbon, Disaronno, black glutinous rice, cherry, and roasted peanut topped with a marzipan sponge brittle for a nostalgic yet elevated indulgence.

Low or No ABV? You’re Covered

TIMELESS also features a trio of alcohol-free creations. The Watermelon Garibaldi, for instance, mixes Seedlip Grove with Monin Bitter and coconut milk, topped with shaved frozen watermelon and chocolate sunflower seeds, summer in a glass, no spirits needed.

Punch Bowls for the Party

Serving 8 to 12 portions, punch bowls like the Mahjong Club Punch bring people together with bee pollen-infused Hendrick’s Gin, rum, passion fruit, chamomile tea, and a celebratory splash of prosecco. Ideal for group gatherings and conversation over cocktails.
