15 Stamford Launches Innovative Menu Where Land Meets Sea

The Capitol Kempinski Hotel Singapore proudly introduces its latest culinary venture, 15 Stamford, an exquisite blend of modernity and heritage charm. With its grand opening on February 28, 2024, the restaurant unveils its pièce de résistance: the Where The Land Meets The Sea menu. This pioneering gastronomic journey promises to delight diners with its commitment to fresh, creative cuisine, setting a new standard in Singapore’s culinary scene.

Boasting a repertoire of over 50 meticulously crafted dishes, 15 Stamford showcases a symphony of flavors and textures that celebrate the essence of every ingredient. From tantalizing starters to sumptuous mains and decadent desserts, each offering is a testament to the culinary prowess and dedication to excellence.

Kicking off the culinary voyage are classics like the Cobb Salad (S$28), featuring a medley of fresh ingredients including cos lettuce, creamy avocado, savory bacon, and tangy blue cheese. For a refreshing twist, guests can indulge in the Crystalline Ice Plant Salad (S$28), marrying smoked magret duck breast with raspberry vinaigrette.

For appetizers, the House Cold-Smoked King Salmon (S$22) offers a tantalizing blend of flavors, while the Pan-Fried Foie Gras (S$32) presents a delightful fusion of sweet and savory notes. A must-try is the Foie Gras Kaya Toast (S$38), a modern take on a local classic, featuring organic egg foam and kaya gel on brioche.

Moving on to mains, diners can savor premium cuts of meat and seafood expertly grilled to perfection. Highlights include the Dry Aged Black Angus Beef OP Prime Rib MS 3 (S$195) and the Char-grilled Wood Smoked Quail (S$52), served in an exquisite wooden chest for added aroma.

Land enthusiasts can indulge in the Braised Wagyu Beef Cheeks (S) or the Pork Belly with Crispy Crackling (S), while seafood lovers will relish the Broiled Chilean Sea Bass (S) and the Maine Lobster Pasta (S).

To round off the dining experience, guests can indulge in decadent desserts such as the Valrhona Hot Chocolate Lava Dip (S) or the Pandan Soufflé (S), offering a perfect blend of sweet indulgence and local flavors.

As guests step into the elegant ambience of 15 Stamford, they are enveloped in colonial architectural details and a unique retractable stained-glass ceiling. The restaurant’s classic European elements and eclectic Asian touches create a timeless ambiance, perfect for a memorable dining experience.

For those seeking a more intimate setting, The Private Room offers a secluded space for up to 12 guests, while the Wine Terrace provides a quiet retreat for wine aficionados.
