For a unique dining experience that blends the best of Mediterranean and Peruvian cuisine, check out the newly opened Mosella, nestled within the Forest Terrace of Pan Pacific Orchard on Level 2. Named after the word ‘morsel’, Mosella promises a culinary adventure celebrating flavors from mountains to the sea.

A Feast for the Senses

From the moment you step into Mosella, you will be transported to a vibrant and sophisticated space. The restaurant is a 10-meter-tall longhouse perched over an artificial waterfall, surrounded by lush foliage. The interior features a rich palette of burnt orange and jewel-toned greens, complemented by white-green marble floor tiles and warm timber-lined walls. Lofty glass windows flood the space with natural light, offering views of the verdant surroundings.

The restaurant’s centerpiece is a dramatic mirrored column adorned with glittering mosaic tiles, providing the perfect backdrop for social occasions filled with laughter and indulgent meals. An open kitchen allows guests to witness chefs in action, meticulously crafting sharing plates over a charcoal-fired Josper grill. A theatre bar and live culinary counters further enhance the multi-sensory experience.

A Fusion of Culinary Borders

Executive Chef Pedro Samper, a San Sebastian native, leads the culinary team at Mosella. He brings together Mediterranean and Peruvian influences to create a truly unique dining experience—a first in Singapore.

“I have always been an explorer of cultures, and Peruvian cuisine is such a fascinating confluence of culinary traditions,” shared Samper. “We have been inspired to connect the two culinary borders by forging traditional flavors and techniques from the Mediterranean with the vibrancy of Peruvian ingredients to create our own unique style. We welcome guests to embark on a unique culinary adventure with us at Mosella.”

Mosella’s a la carte menu, available for both lunch and dinner, is a testament to this fusion of cultures. The menu features thoughtfully curated categories that highlight the season’s finest ingredients with a focus on sustainability.

We begun our culinary journey with the Peruvian national dish of Spanish origin, ceviche, available in myriad flavours. The hamachi tiradito and red tuna ceviche nikkei offer a fusion of Peruvian and Japanese cooking styles. Both were standup appertisers for us for the night, together with the hearty burrata, enhanced with a drizzle of pedro ximenez, a sweet Spanish wine.

Mains

The mains showcase expertly grilled proteins like lamb chops marinated with aji panca miso (a house blend of Peruvian red pepper and Japanese miso) and an 800g bone-in ribeye known as txuleta from their extension grill selection.

Classic Mediterranean dishes like buttery black cod and grilled octopus add to the diverse offerings. Sides like piquillo peppers and Japanese sweet corn infused with togarashi complete your meal.

Sweet Endings

End your culinary journey on a sweet note with Mosella’s desserts. The tarta de queso, an ultra-creamy crustless burnt Basque cheesecake, is a tribute to Chef Pedro’s hometown. Cacao is a rich medley of Manjari chocolate, hazelnuts, and caramel, adorned with a chocolate coin reminiscent of the gold Inca coins from Peru. The sourish pina colada is recommended by the chef to complete the meal with a fresh afternote.

Overall, we enjoyed the light-touch injection of Peruvian and Japanese flavours into a mainly Mediterranean cuisine menu, offering familiar classic dishes, but elevated and differentiated from the usuals.

Set Menus

For those looking for a complete dining experience, Mosella offers seasonal three-course set lunch ($78++) and a three-course set dinner ($98++) that rotate every three weeks.

Look forward to a rotation of delectable appetisers such as the hamachi tiradito, with fresh slices of Japanese amberjack served with a zesty Mandarin ponzu sauce. Mains include options like the crispy spatchcock chicken, roasted and seasoned with Espelette pepper, black garlic and served with a side of charred broccolini. Desserts like tres leches “sandy”, a simple vanilla sponge with strawberries and Chantilly cream and pina colada, a gluten free choice with pineapple, coconut and passionfruit, are available.

Beverages

An ever-changing wine menu complements the fine food, featuring handpicked selections from renowned regions and boutique wineries. The cocktail program offers classic drinks with a twist, such as the Indifference and Mezcal Colada. Non-alcoholic options like the Ginger Pistachio Mule and Passionfruit ‘Martini’ are also available.
