Eden’s Executive Chef Nicholas Cheng

If you’re looking for an escape from the bustling Orchard Road, Eden Restaurant at Pullman Singapore Orchard might just be the perfect antidote.

Chef Nicholas brings with him, over 15 years of culinary chops, honing his craft at Michelin-starred restaurants such as Jean-Georges. Intrigued by traditional Asian recipes, Chef Nicholas is constantly looking for new and innovative ways to push the boundary for Asian culinary traditions with a modern interpretation, while at the same time, preserving the essence and roots.

This is clear from the creations in his menus.

Modern Asian Creations by Chef Nicholas Cheng

Tuna Ceviche with Ikura ($26++)

The appetisers at Eden are vibrant and fresh, with the Tuna Ceviche with Ikura drawing inspiration from the beloved raw fish salad from northeast Thailand. The fresh yellowfin tuna is marinated in a citrus-based mixture, which gives it a bright and refreshing flavor. The addition of coconut sauce infused with kaffir lime leaves, finger lime, and ikura bring a burst of citrusy and briny flavors, resulting in a unique and exotic creation that showcases the delicate flavors of the tuna.

For those who prefer a full vegetarian starter, the Thai Papaya Salad or the Kentang Penyat are both fun to enjoy, bringing in regional flavours from Thailand and Indonesia respectively.

Thai Papaya Salad ($18++)
Kentang Penyat ($12++)

For a starter that leans towards Chinese cuisine, try the Cold Dressed Drunken Chicken – Chinese wine-marinated chicken served with roasted peanut, and cucumber slaw, tossed in cold Szechuan dressing.

Cold Dressed Drunken Chicken ($22++)
Eden Crab Cakes ($26++)

The Eden Crab Cakes are also noteworthy, with a mix of herbs and spices that elevate the dish to a whole new level of taste and texture. The delectable chili-lime aioli gives a zesty kick that perfectly complements the sweetness of the crab meat.

Satay Lamb Rack ($40++)

Moving on to the mains, the Satay Lamb Rack is a must-try signature creation that epitomises Chef Nicholas’ culinary ethos.

The fragrant blend of spices and seasonings used to marinate the lamb racks creates an irresistible, yet familiar flavor. The lamb is grilled to perfection and served with charred broccolini and homemade peanut sauce that perfectly complements the dish.

Salmon Spicy Coconut ($32++)

The Salmon Spicy Coconut is also a delicacy that embodies a harmonious blend of earthy flavors and exotic spices. The perfectly seared, tender salmon swimming in a pool of spicy coconut curry sauce, with a crispy skin that crackles under your fork, is like a journey through the layers of flavors.

Szechuan T-Bone Steak ($138++ for 2 people)

For adventurous diners who love bold and exciting flavors, the juicy grain-fed Szechuan T-Bone Steak is another must-try item.

Crafted with quality grain-fed beef and marinated with a homemade blend of exotic Szechuan spices, each succulent bite is a symphony of sweet and savory notes, accompanied by a tingling sensation. Personally, I prefer my steak lightly seasoned to enjoy the natural meaty flavours, but this is an interesting dish to try.

Whole Grilled Snapper

To round off the meal, Eden Restaurant serves up several interesting modern Asian fusion desserts.

The White Sesame Hokkaido Milk Puff is a delightful treat with fried sesame puffs filled with creamy Hokkaido milk and served with lemon curd.

The Lemongrass & Ginger Jelly is another refreshing option to end on a zesty note.

The cocktail program at Eden Restaurant is also noteworthy, with well-crafted cocktails that pay homage to Asian traditions. The best sellers include 50 Shades of Red, The Originals, and Kelapa Club, available at $19++ each.

Verdict?

Eden Restaurant at Pullman Singapore Orchard will be an interesting visit for gourmands who seek a taste adventure of modern Asia cuisine. With its beautiful ambiance, impeccable service, and delectable dishes, this restaurant is a great escape from the busy city when you are in the Orchard area.
