Diners in Singapore can experience the rich flavours and culinary traditions of North India this September as Grand Copthorne Waterfront Hotel Singapore presents The North Table, a special four hands dining collaboration at SanSara from 9 to 13 September 2026.

For five days only, Master Chef Pannalal Nath will join acclaimed North Indian guest chef Mujeeb ur Rehman to present a selection of four course and six course menus, alongside an exclusive à la carte offering. The collaboration brings together family recipes, royal Awadhi influences and contemporary presentation, with both chefs drawing on traditional techniques and regional ingredients to showcase the diversity of North Indian cuisine.
Set against SanSara’s riverside setting, The North Table reflects the chefs’ shared interest in preserving India’s culinary heritage while introducing diners to lesser-known regional flavours and traditions.
Chef Mujeeb ur Rehman’s contribution is closely tied to his family’s culinary history. His great grandfather, the late Abdul Raheem Quraishi, served in the Royal Kitchen of Awadh during the British era, while his grandfather, Mohammad Ahmed Quraishi, continued the family tradition and established a restaurant in Old Lucknow. Chef Rehman has since spent decades researching and preserving traditional Awadhi recipes, with a particular focus on authentic vegetarian Muslim cuisine and royal Indian cooking.
For The North Table, Chef Pannalal and Chef Rehman have combined their expertise to create dishes inspired by different culinary traditions across North India. The menus feature carefully preserved recipes and techniques including slow cooking, charcoal grilling and handcrafted spice blends.


The non-vegetarian menu includes Shahi Galawati Kebab, known for its tender texture, and Bharwan Calamari filled with prawn and crab mousse. Another highlight is Kashmiri Morel Pulao paired with Saffron Butter Lobster Kurchan.
Vegetarian diners can enjoy dishes such as Chowk Ke Tikki and Rajma Ki Galouti, followed by Kashmiri Morel Pulao with Saffron Paneer Rogan Josh. The meal concludes with Sheer Khurma, a rich saffron infused dessert rooted in North Indian culinary tradition.
The à la carte menu also features signature dishes from both chefs, including Bhune Tamater Jao Ka Shorba, Dum Ke Machli served either seared or steamed, and Murgh Tikka Mirza Hasnu, which combines spicy, tangy and smoky flavours.
The North Table will be available from 9 to 13 September 2026, with lunch served from 12pm to 2.30pm and dinner from 6.30pm to 10.30pm. Last orders are at 2.15pm for lunch and 10.15pm for dinner. SanSara is closed on Mondays and Tuesdays.
The four-course menu is priced at S$68++ per person, or S$98++ with beverage pairing. The six-course menu is priced at S$98++ per person, or S$128++ with beverage pairing. Both menus are available in vegetarian and non-vegetarian options. MyMillennium members can enjoy 30% off.
