We have always enjoyed the thematic buffet selection at Food Capital and this Japanese selection did not disappoint. From the decor right down to the little details, everything was meticulous presented to bring out a top notch culinary experience.

We recently went down for a Saturday lunch tasting and were genuinely delighted by the wide variety. If you go for the dinner buffet, the food selection features even more items. The spread offers a beautiful balance of modern and traditional Japanese dishes at a reasonable pricing for the quality.

Just about any classic dish you would normally see at a standard Japanese restaurant has a version featured on this buffet line, making it easy to satisfy all your cravings in a single seating.

This extensive culinary showcase is part of a special four hands collaboration honouring 60 years of diplomatic relations between Japan and Singapore. It brings together the expertise of the hotel’s Michelin trained Chef Elson Lee and Japanese Guest Chef Keiji Matoba.

To start the meal right, explore a refreshing array of appetisers and salads that capture the essence of Japanese seasonality.

You will find small plate items like the Century Egg with Tofu, Takoyaki and Pork Katsu. For something warm and comforting before hitting the heavier mains, the soup section rotates traditional broths such as a hearty Pork Miso Soup, Satsuma style Chicken Soup, and the flavourful Kasu jiru, a Hyogo style sake lees soup, which we get to savour.

Moving on to the hot selections, the buffet impresses with a variety of grilled specialties and hearty meats. Some standout creations we enjoyed included the Yuzu-marinated Grilled Spanish Mackerel and the Roast Beef with Yakiniku Sauce.

Meat lovers will be thrilled by options like the Unagi Kabayaki and the Miyazaki Black Grilled Chicken. Premium ingredients like Wagyu beef and special dashi components are thoughtfully sourced straight from Japan to maintain authenticity.

No buffet is complete without a solid selection of fresh seafood and fried delights.

The seafood island offers a bountiful catch including Chilean Scallops, Flower Clams, and freshly shucked Irish Oysters available during the dinner service.

The sashimi station is equally stellar, featuring thick cuts of airflown Salmon, Tuna, and Octopus. Right next to it, you can grab freshly fried Nobashi Prawn and Sweet Potato tempura that pair well with a bowl of cold Soba or Udon noodles.

We also loved the colourful street food vibes from the Oden Station and a live pop-up revolving sushi belt.

For us, highlights of the meal includes the humble Steamed Chicken in Sesame Sauce and the wonderfully fragrant Yuzu marinated Grilled Spanish Mackerel, among many others.

You definitely need to save some room for the dessert section which draws inspiration from Japanese patisseries.

The delicate Matcha Mille Crepes and the delightfully chewy Warabi Mochi are absolute must tries that perfectly round off the heavy meal. Those with a sweet tooth will also appreciate the Hojicha Panna Cotta and a fun live station flipping fresh Matcha Azuki Pancake and Waffles.

If a full buffet sounds too intimidating, the hotel also offers a beautiful Japanese themed Sakura Afternoon Tea at The Lobby Lounge starting at $68++ for two diners.

Alternatively, professionals looking for a quick bite can grab the Japanese Tiffin Lunch Set for $28++ which includes salmon and tuna sashimi alongside teriyaki chicken.
