The phased reopening, which began on July 10, 2024, marks a significant milestone in the hotel’s culinary evolution, promising guests an unforgettable dining journey.
Return of Iconic Favorites: StraitsKitchen and BRIX
StraitsKitchen, renowned for its authentic Singaporean ethnic cuisine, has reclaimed its status as the first Halal-certified buffet restaurant in a five-star hotel on Orchard Road. Under the leadership of Chef de Cuisine Nelson Wong, who brings over 25 years of culinary expertise, the restaurant continues to showcase vibrant show kitchens and a diverse menu featuring Chinese, Malay, Indian, and Nonya dishes. New menu additions include premium specialties like Fish Head Curry, Sustainable Salted Egg Prawns, and BBQ Roaring Forties Lamb, complemented by a fresh juice bar and traditional desserts such as sago gula melaka and goreng pisang.
BRIX, the hotel’s premier live entertainment venue, has also reopened, offering an enhanced beverage menu and bar snacks in its two distinct zones: the lively Live Zone, featuring international band Gravity, and the Quiet Zone, a refined wine and whisky bar. Live performances take place five nights a week, adding a dynamic flair to the venue.
Anticipated August Openings: Pete’s Place and The Shop
On August 19, 2024, Pete’s Place and The Shop will reopen their doors. Pete’s Place, a staple for authentic Italian comfort food since 1973, will continue its tradition under the new leadership of Chef Salvatore Giorgio Catania from Puglia, Italy. The restaurant now features a private dining room, a grand wine cellar, and a chef’s table offering kitchen-to-table service. Menu highlights include Costoletta alla Milanese and a signature Negroni Flight.
The Shop, Grand Hyatt’s gourmet hub, will offer a curated selection of barista-crafted coffee, freshly baked goods, and sustainable ingredients, available both in-store and through an e-commerce platform. Exclusive collaborations, such as the first-in-Singapore First Fill Sherry Butt Cask featuring Glenlivet 16-Year single malt whisky and the pandan-infused Scotts Lager, will be among the standout offerings.
Oasis Bar Now Open, Full Restaurant Experience to Follow
Oasis Bar is already welcoming guests, offering a diverse range of culinary delights in both indoor and outdoor settings. The bar features an extensive selection of large-bottle wines and Champagnes, alongside an all-day live DJ. The full restaurant experience, set to open on September 9, 2024, will include thematic events and live music, creating a perfect retreat for guests under the guidance of Chef de Cuisine Jeffrey Low.
October Grand Openings: Le Pristine Singapore and Martini Bar
October 2024 will see the Southeast Asian debut of Michelin-starred Chef Sergio Herman with the opening of Le Pristine Singapore. This new casual fine dining destination will offer a festive tribute to Italian flavors infused with Herman’s Zeeland culinary heritage, positioning it as the crown jewel of Grand Hyatt Singapore’s dining transformation.
Also launching in October, the newly revamped Martini Bar will provide an inviting atmosphere with one of the largest selections of handcrafted martinis in Singapore, making it an ideal spot for after-work drinks and social gatherings.
