Stepping into HEY KEE HK Seafood always felt like an immediate transportation to the vibrant streets of 1980s Hong Kong. Situated at the historic former Singapore Badminton Hall, the beloved restaurant is known for encapsulating the nostalgic flavours and iconic street dishes of the classic dai pai dong food scene. Now, they are pushing culinary boundaries through an exciting new partnership. HEY KEE HK Seafood joins forces with Meat Co., the only specialty butchery in Singapore carrying the prized Montrak Jeju Pork. With this collaboration, HEY KEE is the first ever Chinese restaurant in Singapore to serve Jeju pork, bringing this prized Korean ingredient into a series of signature Cantonese dishes.

The exceptional quality of the meat is evident in every bite. Sourced directly from Montrak Farm, the largest single source Jeju pork farm with forty years of legacy, every cut comes with complete traceability. The pigs are raised free of antibiotics and hormones within a stress free environment maintained at an optimal 17 degrees Celsius. By extending the breeding period by twenty days and utilising a costly corn based nutritional feed, the farm is said to achieve pork with remarkable marbling and a profoundly satisfying taste.

We were invited for a dinner tasting to savour the Jeju Pork creations, savouring four new dishes.

For fans of traditional zi char dining, the Sweet & Sour Jeju Pork (S$20.80) is a no-brainer to start with. Enhanced with the premium Jeju pork and glazed in a signature sweet and sour sauce, this classic recipe achieves the ideal ratio of meat to fat for a balanced bite.

Those who crave a spicier kick will enjoy the Stir Fried Pork Tenderloin with Pickled Chillies (S$20.80). The tender slices of pork are uplifted by the punchy heat and tang of pickled chillies, delivering a bold, savoury, and addictive flavour profile, best complemented with a bowl of steamed rice.

Next, we were treated to an absolute spectacle with the Flaming Jeju Pork Tenderloin (S$30.80). This dish is served tableside where thick cubes of Jeju pork tenderloin are carefully seared before being ignited with high proof whisky.

The resulting flames create deep caramelisation and impart a subtle smoky aroma that elevates the natural sweetness of the premium meat. It is a brilliant display of culinary theatrics paired with a remarkable depth of flavour.

Another standout creation on the menu is the Crab Roe Baked Rice with Jeju Ham (S$56).

This luxurious dish features plump grains of rice braised in flavourful crab roe, savoury crab butter, and milk. The rice is then crowned with succulent cubes of Jeju Black Pork Ham and a luscious crab roe sauce. While incredibly rich in flavour, we felt this dish can be enjoyed better if the crab roe is not mixed into the rice, but eaten on the side as the strong flavours of the Jeju ham overpowers the crab roe.

Beyond the limited time collaborative menu, the restaurant continues to impress with its heritage offerings.

We also tasted the Sizzling Choy Sum in Claypot with Tai O Shrimp Paste (S$20). Served bubbling hot, the vibrant greens retained a wonderful crunch while being thoroughly infused with the aromatic and savoury shrimp paste.

The Temple Street Chicken with Spicy Chips (S$39.80) showcased roasted poultry with a wonderfully crisp skin, complemented by addictive spicy chips served on the side.

Finally, the feast was rounded off with the majestic Typhoon Shelter Stir Fried Crab (from S$121). True to its namesake, the fresh crab was buried under a generous mountain of perfectly fried garlic and chillies, locking in the natural briny sweetness of the firm crab meat while offering an irresistible aromatic crunch.
