Regional Hawker Showcase Returns to Raffles Courtyard with Authentic Flavours of the Philippines

Singapore’s vibrant dining scene is set for another exciting culinary experience as the Regional Hawker Showcase makes its highly anticipated return to Raffles Courtyard, once again in partnership with Makansutra. Celebrating the diverse and rich flavours of Southeast Asia, this year’s showcase opens with a special spotlight on the Philippines, featuring renowned chef Nico Millanes from Bacolod.

Running from 20 to 26 April 2026, the week-long residency marks the first of only two exclusive Regional Hawker Showcase editions for the year.

Chef Nico Millanes Brings Bacolod Heritage to Singapore

Chef Nico Millanes first won over diners during the April 2025 edition, and now returns to Singapore with even more authentic flavours from his hometown. The chef is the creative force behind Portiko, a popular café in Bacolod known for its coastal dishes inspired by Negros Island traditions.

Having started cooking in his mother’s kitchen at just 12 years old, Nico later honed his skills through international culinary experiences. Today, he is passionate about showcasing Filipino food culture to audiences beyond the Philippines.

Signature Chicken Inasal Takes Centre Stage

For this limited-time showcase, Chef Nico will present one of the Philippines’ most iconic dishes, Chicken Inasal, a beloved grilled specialty from Bacolod and Iloilo that dates back to the late 1900s.

Prepared live on-site, guests can enjoy the enticing smoky aroma as the chicken grills to perfection. The meat is marinated in a flavourful blend of vinegar, soy sauce, calamansi, garlic, ginger, lemongrass, and annatto seeds, which gives it its signature orange colour and bold tangy-savoury taste.

Priced at ++, the set includes:

• Fragrant garlic fried rice infused with annatto oil
• Atchara (pickled vegetables)
• Dipping sauce made with Sinamak vinegar, soy sauce, and fresh calamansi
• Binakol, a comforting Filipino chicken soup simmered in coconut water and enriched with tender coconut meat

Guests can also add two selected cocktails for ++ to complete the dining experience.

Final Showcase Coming in August

Food lovers should not miss this rare chance to savour authentic Bacolod flavours in Singapore, especially as only one more Regional Hawker Showcase is planned for 2026, scheduled from 24 to 30 August 2026.
