Raffles Hotel Singapore is set to usher in a new chapter of its storied culinary history with the launch of 1887 by André, a signature restaurant helmed by renowned chef André Chiang. Officially opening on 31 March 2026, the restaurant is located within the historic formal dining room of the Main Building and represents the hotel’s most ambitious gastronomic venture to date. Reservations are now open.

Conceived as a refined social dining space, 1887 by André pays homage to heritage gastronomy through the lens of French culinary techniques. The restaurant’s name references the year Raffles Hotel Singapore was founded, and the concept invites diners on a sensory journey through time, where culture, craftsmanship and cuisine intersect. Both the interior design and menu draw inspiration from the hotel’s evolution from its 19th-century origins to the present day.

A Homecoming for Chef André Chiang

The opening of 1887 by André marks a significant homecoming for Chef André Chiang, who returns to Singapore as Chef Patron. Widely regarded as one of Asia’s most influential culinary figures, Chef André has received global recognition from the Michelin Guide, The World’s 50 Best Restaurants, and was honoured with a Lifetime Achievement Award by 50 Best.

Chef André previously transformed Asia’s fine dining scene with his former Singapore restaurant, Restaurant André. His return signals a milestone not only in his own career, but also for Raffles Hotel Singapore and the nation’s culinary landscape. At 1887 by André, he brings his celebrated “Octaphilosophy” approach to cuisine, blending innovation with deep respect for tradition.

The menu at 1887 by André is described as a “taste of time”, inspired by the moments, flavours and eras that have shaped both Raffles Hotel and Singapore. Drawing from Victorian-era influences, multicultural culinary traditions and contemporary techniques, the offerings reflect Singapore’s role as a global crossroads.

Historical references from the hotel’s archives are reinterpreted through Chef André’s modern sensibility, alongside dishes inspired by Singapore’s diverse flavours using locally sourced and cultivated ingredients. Diners can expect nods to Victorian dining rituals, revived flavours from Raffles’ early years, and storytelling elements that bring history to life.

Adding to the immersive experience are preserved artefacts from the hotel’s past, including its storied silverware collection and the legendary silver trolley that was buried during World War II and later recovered. These elements form part of a larger masterplan to transport guests into a bygone era while delivering a contemporary, taste-forward dining experience.

The restaurant will offer an à la carte menu alongside classic set menu options, complemented by a curated beverage programme featuring both Old and New World selections, as well as bespoke alcohol-free creations inspired by Nanyang flavours.

Set within the hotel’s iconic colonial architecture, the design balances heritage and modernism. Influences of a glasshouse are woven into the space, with materials such as marble and wood complemented by tropical elements including palm trees and punkahs, reflecting the region’s climate and character.
