Under the masterful touch of Chef de Cuisine Kuldeep Negi, the festival highlights an exquisite selection of meats, seafood, and vegetables prepared in the tandoor, a traditional clay oven dating back to the ancient Indus Valley civilization. With thoughtfully paired alcoholic beverages selected by the hotel’s sommeliers, this celebration of flavors promises a gastronomic adventure like no other.

Highlights of the Tandoori Festival Menu

Begin your feast with the Bhatti Ki Macchi, where premium black cod takes center stage, delicately enhanced by a smoky tandoor finish and the tangy sweetness of papaya murabba. Pair this with the refreshing La Margarita, featuring Volcan Tahona Blanco and lime juice for a perfect blend of tart and smoky flavors.

For the main course, experience:

  • Tandoori Bater: Grilled quail infused with rose and spices, served with spiced jackfruit naan.
  • Tandoori Malai Crab: Creamy, cheesy crab paired with grilled pumpkin, elevated by a glass of bubbly.
  • Highway Murgh Tikka: Aromatic chicken kebabs accompanied by mint yogurt and baby turnip salad, complemented by a vibrant Château Marsyas wine from Lebanon’s Békaa Valley.

Vegetarians will find equally indulgent offerings, including:

  • Bhatti Ki Galouti: Pan-seared vegetable patties paired with papaya murabba.
  • Makai Aur Mattar Seekh: Sweet corn and green pea kebabs served with jackfruit naan.
