Traditional Edomae Sushi at Tomidou (富道) with Premium Sushi Omakase Sets from $140 for Lunch – Closing on 31 July 2024

First launched in the fourth quarter of 2023, Tomidou (富道), a Japanese sushi omakase restaurant located at Nassim Road in the Tanglin district, recently launched its exclusive Edomae sushi sets. Available for a limited time, the sushi sets are designed to offer remarkable value while showcasing the finest in traditional Edomae sushi.

Edomae sushi, or Edo-style sushi, is the traditional form of sushi that originated in Tokyo during the Edo period. It emphasises the use of fresh, seasonal ingredients, often sourced from Tokyo Bay, and primarily features nigiri, which is a slice of fish or seafood pressed onto vinegared rice. Key preparation techniques include marinating, simmering, and curing to enhance flavours and textures. The rice is seasoned with vinegar, sugar, and salt to complement the toppings, and the overall style is minimalist, focusing on the natural flavours of the fish. The craftsmanship of the sushi chef is crucial, with years of training required to master the necessary techniques.

The Edomae Sushi Set at Tomidou is priced at a very reasonable $140 for lunch. The full omakase includes one chawanmushi, twelve pieces of meticulously crafted sushi, miso soup, and a mochi dessert. This set is an excellent opportunity for sushi lovers to enjoy high-quality sushi in an accessible format.

For those seeking an elevated sushi experience, the Premium Sushi Set is available for $180. This set features a starter, one chawanmushi, sixteen pieces of premium sushi, miso soup, and a Japanese fruit dessert. This offering is designed to provide a comprehensive and luxurious sushi experience that showcases the depth and variety of Tomidou’s culinary expertise.

Tomidou prides itself on the exceptional freshness of its ingredients, which are sourced from Japan four times a week.

The chef personally selects the freshest ingredients, partnering with exclusive suppliers in Japan to ensure that every piece of sushi meets the highest standards. Tomidou focuses on using seasonal produce at its peak quality, emphasising the importance of enjoying ingredients at their most flavourful and nutritious state.

We were invited for a lunch tasting and had a wonderful experience savouring their sushi omakase lunch. The skilfulness of the chef is apparent, from his precise, artful knife works and quiet chemistry with his assistant chef, operating seamlessly without the need for any verbal communication.

Every piece of nigiri sushi is like a minature work of art as you witness the chefs create them in front of you with razor sharp precision and attention to details. For instance, to achieve the light char on the hotate (Japanese scallop), the chef and his assistant had to delicately dab it with a small piece of lighted charcoal.

Seasoning was done in tiny pinches, with no room for any error.

At $140 per pax for lunch, this is one of the most affordable premium sushi omakase experiences you can get in town.

Unfortunately, after launching their sushi omakase, Tomidou also announced the temporary closure of their restaurant, effective 31 July 2024, as their chef has to return to Japan to attend to urgent family matters.
