Grand Copthorne Waterfront Hotel is undergoing a S$30 million refurbishment and as part of the enhanced F&B offerings, a new North Indian restaurant, SanSara, has been added and recently launched.
SanSara faces the Singapore River for a riverfront dining experience and serves authentic North Indian Awadhi cuisine, said to date back over 5,000 years with influence from Mughal, Turkish and Persian flavours.
The restaurant is led by Master Chef Akhilesh Pathak, marking his maiden venture in Singapore after a successful career in esteemed luxury restaurants across North India.
We were invited for a dinner tasting on the opening night and these were the items we savoured a mix of dishes from their main menu as well as their Diwali set menu, priced at $68 per pax, with both vegetarian and non-vegetarian options available:

Malai Jheenga: Prawn, Turmeric, Coconut Yoghurt, Tomato, Onion
Masala Keema Saag: Organic Greens, Cumin, Garlic, Onion
Aloo Hara Pyaaz Masala: Potato, Cashew, Onion, Tomato, Green Onion
Kofta Lazeez: Cashew, Tomato, Onion, Saffron

Dal Kabila: Mixed Lentil, Garlic, Cumin, Dried Chilli
‘Indian Ice Cream’. This dessert sits on a bed of condensed milk, strings of sweetened vermicelli, and crunchy basil seeds, infused with aromatic rose syrup, for a burst of flavour in every bite.
While we are not experts in Indian cuisine, we know good food when we savoured them and the food at SanSara was delightful, offering a mix of spices and aromatic flavours. We especially enjoyed the biryani, one of the best we have tasted, slow-cooked to perfection.
There aren’t a lot of higher end Indian restaurants by the waterfront in the Havelock Road area and SanSara will be able to add to the overall, diverse range of culinary offerings there.

The curated menu at SanSara offers a wide range of a la carte and set menus, including vegetarian options, creative drinks, and an extensive wine list. With Deepavali nearing, this may be a good time to visit SanSara to try out their Diwali set menu.
