FOREST 森 launches S$54 National Day Special Menu featuring Chef Sam Leong’s Mother’s Heritage Recipes

This National Day, one of Singapore’s most accomplished chefs, Chef Sam Leong, will be paying homage to traditional Singaporean home-cooked fares by inviting his 76-year-old mother, Madam Pit Yoke Eng, to share her treasured recipes at FOREST 森 restaurant at Resorts World Sentosa, Equarius Hotel.

The set meal goes for S$54++ per pax, with a minimum order of 2 pax. Items served include a soup of a day, a vegetable dish, chicken rice main and a dessert.

During an intimate tasting session hosted by Resorts World Sentosa together with Chef Sam Leong and his mother and wife, Forest, Chef Leong shared the culinary inspirations behind these dishes and what’s special about them.

The menu highlight is clearly the chicken rice ball main course. Chef Leong shared that each of the rice ball consists of a mixture of glutinous rice, short and long grain rice to ensure the ball holds it share and gives a good texture.

While it may seem like a simple dish, it’s the attention to details that make Chef Leong’s chicken rice ball stands out. The chili, ginger and soy sauce served as condiments are all specially formulated by Chef Leong to deliver extra kicks. The chili is fermented for 2 weeks and has an aroma that will linger in your tongue. Here’s how it look like when it goes into fermentation:

For the Soon Hock fish fillet dish, the fish is completely deboned for the ease of the diner’s enjoyment. This requires a lot of work as Soon Hock fish is filled with tiny bones.

For the stir-fried baby Kailan dish, the magic is in the crispy salted fish garnishing which won’t stick in your teeth like the gluey texture of regular salted fish. You get the same great taste, but without the messiness.

The soup and dessert dishes are rotating and will be different at different days. We were served a clear melon pork ribs soup and a fried jackfruit with tapioca balls and coconut dessert.

This National Day Special menu is available for both lunch and dinner (not available on Sunday for Brunch) through the week for a limited time only. Go try it if you want to to know what dishes Chef Sam Leong grew up eating at home.
