Here’s Where You Can Experience a Gastronomic Tour of Singapore this National Day

At Fairmont Singapore & Swissôtel The Stamford, preparations are underway for National Day. A host of experiences await for this year’s festivities, from the many dining and nightlife concepts SKAI, CLOVE, Kopi Tiam, Anti:Dote, Prego, Clove, and Bar Rouge.

SKAI: Special Fireworks Menu

Available until 3 August 2019, the Special Fireworks Menu is specially crafted by Executive Chef Paul Hallett of contemporary grill SKAI Restaurant. Catered for both meat lovers and vegetarians, guests can dine in this lively setting on the 70th floor while overlooking the National Day rehearsals.

Priced at $129, with a special wine pairing at an additional $59, the menu begins with a choice of two appetisers:

  • A Pair of Geay’s Special Oysters topped with wasabi, smoked bonito, caviar
  • Prawn Sashimi with shiso, soba noodles, osetra caviar

Relish in the Quail Yakitori and SKAI’s star main is an Australian Wylarah Wagyu cooked in their signature Josper Charcoal Oven. Those who prefer seafood can opt for Sustainable Sable Fish with summer minestrone, pomelo and Iberico dashi.

The four-course vegetarian menu starts with the Burrata served with edamame pesto, romaine hearts and grapefruit. Indulge in the classic and refreshing Pea Soup infused with coconut and tarragon followed by Roasted Eggplant for mains, which is accompanied by spiced shitake mushrooms, potatoes, and miso butter. Completing the dining experience for both menus is the exquisite dessert masterpiece Caramelised Cheesecake by SKAI’s award-winning pastry team.

Clove: A Gastronomic Tour of Singapore

Swissôtel The Stamford’s all-day dining buffet concept CLOVE presents a variety of Singapore-inspired food stations for the month of August.

Diners can savour Nyonya dishes like the Singapore Laksa, Oatmeal Crayfish with Curry Leaf & Chilli, CLOVE Lamb Rendang, and John Snapper Fish Curry infused with cloves.

Lunch

  • Monday to Saturday: $55++ /adult; $28++ /child (6 to 12 years old)
  • Sunday: $108++/adult; $54++/ child (6 to 12 years old); additional $28++ per pax for free-flow craft beers, $35++ per person for free-flow Prosecco and wines

Dinner

  • Monday to Thursday: $65++/adult; $33/child (6 to 12 years old)
  • Friday to Saturday: $95++/adult; $47++/child (6 to 12 years old)
  • Closed on Sundays for dinner

Kopi Tiam: Claypot Classics

A tribute to the comforting Cantonese clay pot dishes of yesteryear Singapore, Kopi Tiam is offering a Claypot menu for the month of August with a selection of foods crafted through this ancient Chinese braising method. The selections include:

  • Claypot Chicken in Fermented Red Rice Wine
  • Claypot Braised Pork Knuckle
  • Claypot Bak Kut Teh Soup/Dry
  • Claypot Eggplant with Minced Chicken
  • Claypot Bitter Gourd Pork Ribs
  • Claypot Braised Seafood Ee Mee.

Each dish is carefully braised and imparts a distinctively smoky flavour to the meats and vegetables slowly cooked within.

Prego: Contemporary Singaporean-Italian

Prego, the well-loved Italian restaurant at Fairmont Singapore reopens its doors this month after months of an elaborate refresh. The highly anticipated unveil brings forth a brand-new menu and at the same time introduces a new Italian Chef, Mauro Sanna.

Taking inspiration from National Day and Singapore’s vibrant cultures and cuisines, Prego is introducing an Alaskan Chilli King Crab Pizza ($55) to the all-new menu. A delightfully shiok! localised pizza cooked in a wood-fired oven and topped with premium Alaskan Chilli Crab.

Anti:Dote: Singaporean Afternoon Tea and Cocktails

Anti:Dote has curated a menu of afternoon tea treats inspired by quintessential Singaporean flavours. Guests can expect delights like the homemade baos delicately filled with foie gras and chilli crab or savoury smoky 24-hour braised abalone. Those with a sweet tooth will enjoy their rendition of the Malay ondeh-ondeh crafted with Italian mascarpone, Coconut Malibu rum and Black Sugar.

Bar Rogue: Disco Lah! – A National Day Special

Asia’s highest dusk to dawn nightclub Bar Rouge presents its annual National Day party Disco Lah! back for its second edition on 9th August 2019 (from 4 PM through to 6 PM), perched on the 71st floor of Swissôtel the Stamford.

Exclusively for this National Day celebration, Bar Rouge offers a truly Singaporean experience for the evening with locally-inspired snacks and cocktails. The bar team has concocted the following:

  • Milo Dinosaur cocktail ($20++)
  • Strawberry Milo mocktail ($12++)
  • Singapore Sling ($20++). Guests can also look
  • DIY rojak station ($5++)
  • Kachang Putih ($3++)
  • Ice-cream sandwiches in rainbow bread ($5++)

Indeed, there is no better place to catch unrivalled views of this year’s dazzling fireworks display and the roaring fighter jet flypast than at the tallest hotel complex in Singapore.
