The Bird Southern Table & Bar opens at Marina Bay Sands

Last July 3, 2017 the collaboration between Marina Bay Sands and 50 Eggs’ Yardbird Southern Table and Bar opened under the name The Bird Southern Table and Bar.

50 Eggs is the company that reknowned retaurateur John Kunkle owns. He has now worked with Marina Bay Sands to bring Southern comfort food to Singapore.

What are they serving at The Bird?

The 190-seater two-storey restaurant serves Southern U.S. classic dishes, including the famous 100-year-old recipe Lewellyn’s Fine Fried Chicken, Shrimp ‘N’ Grits, Buttermilk Biscuits, and Butter Lettuce and Grilled Mango Salad.

Amongst the classic southern favorites, The Bird has also included as part of their menu, a Singapore-exclusive dish with an inventive spin on local cuisine – the Low Country Laksa.

This dish features a skin-on snapper filet, served with Carolina gold rice pirlau, a heritage rice grain that is indigenous to South Carolina, enhanced with sweet corn and spiced pecans served with a crispy poached farm egg and a caramelized ginger and coconut broth.

This dish was inspired by Kunkel’s travels to Singapore and combined with traditional southern ingredients and techniques.

What are the drinks available?

Available are the Blackberry Bourbon Lemonade, The Bird’s Old Fashioned with Bacon Infused Bourbon, and the Watermelon Sling.

Bar customers can also have The Ong Bak, The Sloe Plum Shrubble and The Japanese Porkchop. These dishes are made with Yamazaki 12-year, dijon mustard, Marugoto Shibori Yuzu, unfiltered apple cider, and fresh thyme.

Operating hours and seats

Guests can also choose between a private dining room that can be configured into two rooms for 6 to 10 people, and a 30-seater semi-private dining room.

Open from 11am to 11pm daily, The Bird offers lunch (11am to 4pm) and dinner (4pm to 11pm) daily, and a signature weekend brunch (10am to 4pm).
