As part of the World Gourmet Summit 2017 line up, Punjab Grill at Marina Bay Sands is offering a one night only special tasting menu on 8 April (this Saturday) prepared by the restaurant’s executive chef, Chef Javed Ahamad.
The 10 course menu is priced at S$109++ per pax and guests will be serenaded with soulful Sufi music by Pakistani singer-pianist, Zubair Ilyas, while enjoying dinner. Both veg and non-veg options are available. Seating is limited and reservations are recommended.
Meet the Chef
Chef Javed is known for his distinctive flair for marrying traditional with contemporary twists. He had spent more than 11 years in various Indian restaurants in Singapore and is credited with introducing a variety of firsts to the Singapore market, including Singapore’s first Indian style champagne brunch.
After an extended period of learning and mastering his creations in India, Chef Javed started his Singapore journey with Rang Mahal at Pan Pacific. He was later one of the pioneer chefs at the Song of India before taking up his current role, helming the kitchen at Punjab Grill.
What to expect?
Chef Javed seeks to surprise diners through a delectable menu of Tandoor favourites, with the main highlight being an assortment of kebabs specially created for the occasion.
Diners can look forward to delicacies such as apple wood-smoked flavoured lobster mince dumpling kebab glazed with coconut ginger chutney; and venison sheekh kebab stuffed with Galbani buffalo cheese; alongside Tandoori duck korma, kheema kaleji pao, chicken nihari, bhuna vegetable, dal Punjab Grill and royal cumin and Romanesco cauliflower pulao.
Vegetarian kebab options include apple wood-smoked asparagus and zucchini dumpling kebab glazed with coconut ginger chutney; beetroot and pumpkin sheekh kebab; and pan-seared soya and edamame beans kebab.
I went for a preview tasting and these are the items I tried:
- Tandoori Duck Korma
- Kheema Kaleji Pao
- Chicken Nihari
- Bhuna Vegetable
- Dal Punjab Grilll
- Royay Cumin and Romanesco Cauliflower Pulao
The standout dish for me was the charcoal chicken, which comes presented in a smoky close-lid jar, assaulting your sense of smell upon lifting the cover. The jet-black chicken are not burnt, but soft and tender on the inside, a little crispy on the outside with a smokey flavour. The venison kebab was pretty tasty too.
For the mains, I particularly enjoyed the tandoori duck as duck is not an ingredient I commonly associate with indian cuisine. The rest of the curries were fantastic too.
