Guzman y Gomez (GYG) has teamed up with homegrown kimchi specialist JIN Kimchi for a limited-time menu collaboration that brings Korean flavours into its Mexican-inspired menu.

Available at all GYG restaurants in Singapore from 20 October 2026, the new Cheesy Kimchi Beef filling combines the brand’s signature Australian ground beef with specially customised fermented kimchi from JIN Kimchi and melted Jack cheese.

The collaboration draws on an interesting connection between Mexican and Korean food cultures. Chilli peppers were first cultivated in Mexico thousands of years ago before making their way to Korea, where they eventually became an essential ingredient in kimchi.

For this collaboration, JIN Kimchi developed a customised version of its signature kimchi specifically to complement GYG’s beef and cheese. The recipe contains no added MSG or sugar and is made without added preservatives, artificial flavours, added colours or unacceptable additives, in line with GYG’s 100% Clean food commitment.

The new filling can be enjoyed in several familiar GYG menu items, including burritos, bowls and nachos.

It is also available without the usual additional S$1 charge for a choice of filling, making it an easy way for regular customers to try something different without paying more.

We recently tried out the new menu items and found the combination surprisingly enjoyable. Mexican and Korean flavours might not be the most obvious pairing, but the combination works better than expected.

The savoury ground beef and melted Jack cheese provide a rich, comforting base, while the kimchi adds a tangy, spicy kick.

The fermented cabbage also brings an additional layer of flavour and texture, giving the familiar Mexican-style filling a distinctly Korean character.

The Cheesy Kimchi Beef is a versatile addition to the menu, particularly for those who enjoy a little spice and are open to trying different flavour combinations. Whether in a burrito, bowl or loaded over nacho fries, it offers a different take on GYG’s usual offerings.
