[Review] Five Regions, One Table: A 8-Hands Culinary Journey at Food Capital’s Flavours of Malaysia

We recently had the pleasure of attending the exclusive launch event of Flavours of Malaysia at Food Capital at Grand Copthorne Waterfront Hotel Singapore, one of our favourite hotel buffets. We thoroughly enjoyed the expansive food selection, the captivating showcase of Malaysian cultural performances, and the thrilling lucky draw that kept the energy high throughout the night. It was a beautiful reminder of how food and culture are intimately intertwined.

The Flavours of Malaysia buffet is an impressive Eight Hands Culinary Journey that brings together the rich flavours, diverse traditions, and unique stories of four distinct regions. By featuring guest chefs representing Johor, Penang, Sabah, and Sarawak, the showcase celebrates Malay, Chinese, and Indian influences alongside indigenous Bornean traditions. Timed alongside the Visit Malaysia 2026 campaign and supported by the Malaysian High Commission in Singapore, the culinary event goes far beyond familiar favourites to spotlight lesser seen regional specialities that are rarely experienced outside of Malaysia.

Cultural performances

The collaborative kitchen is led by Johor born Executive Sous Chef Peter Pang. He is joined by an esteemed lineup of visiting talents, including Chef Linn Yong from Limau & Linen in Sabah, Chef Azhar bin Bah from Smart Hormony Catering in Penang, and Chef Lesly Anak A’ik from Riverside Majestic Hotel Astana Wing in Sarawak. These chefs were selected in collaboration with Tourism Malaysia, Sarawak Trade and Tourism, and the Sabah Trade and Tourism Office in Singapore for their strong reputation and regional expertise.

During our tasting, we enjoyed several standout dishes that beautifully highlighted this multicultural tapestry. The full buffet menu is available here.

It is worth noting that the entire buffet is halal verified by the Majlis Ugama Islam Singapura, making it a highly accessible and inclusive dining option for all families and groups.

Cute dessert items

The addition of selected live cooking stations further elevated our evening, allowing guests to watch their dishes being prepared fresh to order, which added a wonderful sense of theatre to the dining room.

Besides the Malayisan food spread, the regular international fares like Japanese sushi and sashimi as well as cold seafood stations are also available on the buffet line to ensure you get your money worth.
