[Review] A Taste of Spain Lands at CHIJMES with Sabòr

Sabòr has officially opened its doors at CHIJMES, bringing a lively Spanish courtyard dining concept into one of Singapore’s most iconic heritage spaces. Inspired by traditional tapas culture, the restaurant leans into communal eating, bold rustic flavours, and aneasygoing energy. The glasshouse interiors paired with the open courtyard terrace make it feel like you are dining somewhere between a European plaza and a modern city hideout.

We started with Bread & Tomatoes, a simple vegetarian staple that sets the tone with juicy grated tomatoes on warm bread, fresh, clean, and comforting in a very unfussy way.

From the classic tapas section, the Croquette Jamón was crisp on the outside with a creamy, savoury ham filling that melts almost immediately once you bite in. The Croquette Spicy Crab brought a seafood twist, richer and slightly punchy with heat, balanced nicely by its smooth, velvety interior.

The Bikini Sobrasada with Honey & Cheese was a standout for contrast, with salty cured meat, melted cheese, and a light drizzle of honey coming together in a warm toasted sandwich that hits both sweet and savoury notes.

The Calçots Tempura with Romesco added a lighter vegetable contrast, with the tempura giving a delicate crunch and the romesco sauce adding a nutty, slightly smoky depth.

For the main paella, we went with the Grilled Wagyu Beef. The rice is rich and well-seasoned, with every grain carrying a deep savoury flavour. The wagyu is tender and buttery, melting into the rice as you eat, while the slightly crisped base adds a smoky, caramelised bite that gives the dish extra depth and texture.

From the charcoal grill, the Grilled Barramundi with Picón Sauce was clean and well-balanced, the fish flaky and lightly smoky, with the sauce giving it a gentle spice and acidity that lifts the dish.

To end, dessert brought two very different styles of sweetness. The Churros with Chocolate were warm, crisp, and comforting, perfect for dipping and sharing, though they disappear faster than expected once they hit the table.

The Crema Catalana with Cookies was smooth and custardy underneath its caramelised top, paired with cookies that add a bit of crunch for contrast.
