[REVIEW] From Live Carvery Theatre to Retro Soft Serve Bliss, Chef Paul Pairet’s Moutarde and Sundae Royale Brings French Charm to Resorts World Sentosa

If you’re hunting for a new spot to impress your makan kakis, Moutarde at WEAVE in Resorts World Sentosa is now open from 22 November 2025, and it’s the perfect pick for dates, brunches or celebrations. I dropped by during their opening week, and it already feels like a strong new contender in the dining scene.

This is the Singapore debut of Chef Paul Pairet, the genius behind Shanghai’s three Michelin-starred Ultraviolet. If you know his bold, imaginative style, you’ll be pleased to see how he’s adapted it here into something more relaxed, warm, and enjoyable. Right next door is Sundae Royale, his playful dessert parlor, which brings soft serve and classic sweet treats with a twist.

Walking into Moutarde, I immediately felt like I’d stepped into a cosy Parisian bistro, with warm lighting, soft chatter, and a really inviting atmosphere.

The first thing that caught my eye was the live carvery station; a full wooden carving counter with a glowing wood-fired oven behind it. Beside it, a glass-fronted maturation room shows whole cuts waiting for their turn, and I have to say, it is quite the showstopper.

We kicked things off with communal-style starters, where I tried a mix of Eggs Mayonnaise, Grilled Piquillo Peppers, and Homemade Bread served with Tarama. You could really taste the care in each dish, from presentation to flavour.

Seafood lovers will be equally impressed with the elegant oyster bar, featuring fresh oysters from Brittany and delicately smoked jasmine tea salmon.

The cheese selection deserves its own mention. There are over ten varieties of high-quality cheeses alongside the usual charcuterie cuts, all freshly sliced on the spot. You can even DIY your own platter, which makes for a fun way to nibble, mix, and match while catching up over drinks.

I also got to try Pâté de Campagne for the first time. This classic French meat dish was surprisingly delicious, with a rich, slightly gamey flavour that was surprisingly addictive.

At Moutarde, all their meats are roasted, grilled or braised to perfection and carved fresh for diners, with house-made mustards and condiments served tableside.

While I was there, I got to try their Roasted Beef Skewer, which was so tender it literally slid off the skewer and I went back for seconds without hesitation. The Grilled Lamb chops with Aïoli were fragrant and perfectly cooked. I also got to try their Slow-Roasted Pork, which was soft and tender, paired with a creamy potato mash that rounded out every bite beautifully.

The carvery selection rotates daily, so each visit may be a little different.

After our hearty dinner, we headed next door to Sundae Royale for dessert. It felt like stepping back into the 90s! The retro-themed bar is playful and nostalgic, but everything is still elevated.

You cannot miss the Live Churros Station, where the churros are freshly made in front of you, generously coated in sugar, and paired with their chocolate sauce.

We also tried the freshly made French Toasts, which were some of the best I’ve had! Soft and milky in the centre with a perfectly crisp exterior, they come in three flavours – Nutella, Peanut Butter, and Cheese.

My personal favourite is the Cheese French Toast, which reminded me of my mother’s homemade toasts but fancier and indulgent.

On top of that, Sundae Royale has a wide range of ice creams and sorbets with interesting flavours like Caramel Butter Soy, Pistachio, Peanut Butter, and refreshing options like Lemon Curd and Raspberry.

My must-try is the Milk²-flavoured soft serve as it is icy, silky smooth, and yet not too sweet. Paired with the churros and toast, it was the perfect ending to the meal.
