[Review + Promo Alert] Opus Bar and Grill’s Grilled Out Sunday: A Lavish Brunch Experience for Meat Lovers in Singapore

Meat lovers, here is a new, elevated Sunday buffet experience worth trying in Singapore, introduced by Opus Bar and Grill at voco Orchard Singapore. Opus’ Grilled Out Sunday is a carnivore’s dream that combines free-flowing premium grilled meats, appetisers, and theatrical tableside performances for desserts and cocktails.

Known for its high-quality cuts, grilled in an open kitchen where diners can witness the spectacle, the new concept at Opus is available every Sunday from 12 to 3pm.

I recently visited Opus for a tasting session of the Grilled Out Sunday buffet brunch and savoured everything available on the menu. The experience is designed as an à la carte buffet. Dishes are served directly to your table rather than requiring multiple trips to a buffet station, adding finesse.

Priced at $88 per adult and $44 per child aged 6 to 12, the experience includes unlimited appertisers, sides, desserts and grilled mains, all prepared with choice ingredient and meticulous attention to detail.

For smaller eaters, you can choose to forgo the buffet and opt for a set menu, featuring one main course and two sides for $48 per person, with the option to add an appetiser or dessert for an additional $18.

Free-flow drink packages are also available at $48 per person. They offer unlimited Taittinger Brut, beers, house wines, and a selection of three Amaro-forward cocktails: Wild Bramble, Spritzen, and Out of Office.

Non-alcoholic options include fresh juices, specialty coffee, and artisanal teas for an addition S$28 per pax.

The highlight of this brunch is its focus on open-flame grilling, which uses a combination of charcoal and sustainable Jarrah wood. This technique imparts a deep, smoky aroma to the meat, and you can witness your items being grilled in the open kitchen, adding to the overall dining experience. The chefs at Opus take pride in their craft, ensuring that each cut is cooked to perfection, whether you prefer your beef medium-rare or your lamb fall-off-the-bone tender.

The star dishes for Grilled Out Sunday lie in its selection of premium grilled meats. During our visit, we sampled all five of the available protein dishes, including a sixth vegetarian option:

Beef Prime Rib

A beautifully marbled cut, slow-roasted and seared over the grill for a caramelised crust, the meat was tender, juicy, and packed with smoky depth. So good you can eat it on its own, sans sauce.

Smoked Lamb Leg

Seasoned and slow-cooked until it reached melt-in-the-mouth tenderness, the subtle smokiness paired wonderfully with the natural richness of the lamb. Not only is it super tender, it is devoid of the gamey flavour usually associated with mutton dishes.

Crispy Pork Knuckle

A crowd favourite, which we observed, was served at almost every table, the crackling skin splits aside to reveal succulent, flavourful meat underneath. Perfect for pairing with alcohol.

Whole Seabass

Grilled to perfection, this was our favourite among the mains and we would highly recommend ordering this. The fish was flaky and moist, with a delicate smokiness that did not overshadow its natural sweetness. Enjoy it without the accompanying sauce first to savour the natural flavours, before dipping it with a light hint of sauce to enhance.

Roasted Tandoori Chicken

Infused with aromatic spices, this dish offered a delightful contrast to the richer meats. I found this to be a tad too salty for my liking, but it will appeal to those who like more intense flavours and seasoning.

Roasted Spicy Cauliflower 

Another of our favourites, this vegetarian option was a surprisingly hearty yet healthy treat, with a charred exterior and a spicy, flavourful marinade. I find this addictive and ordered several servings of it.

Other than the mains, we tried all the appertisers and sides available as well.

When it came to sides, the Beef Fat Roasted Potatoes were a clear favourite – crispy on the outside, fluffy inside, and infused with rich beef fat. The Mac and Cheese was decadently creamy, while the Creamed Spinach with Egg Yolk added an elevated touch. For lighter options, the Green Salad with Orange Balsamic Dressing provided a bright contrast. Go easy on the sides to leave room for appertisers and mains.

Appertisers include:

Plump, fresh shrimp served with shredded lettuce, tomato chutney, lemon and a tangy, creamy sauce.

Beetroot and Feta Salad – A refreshing mix of pickled beetroot, creamy feta, rocket, and almond flakes.

Caesar Salad – Romaine lettuce served with bacon bits, crouton and parmesan.

Pumpkin Soup with Herb Oil – Velvety and comforting, with a drizzle of fragrant oil for depth.

Rich, shredded duck confit spread over crusty bread, paired with housemade pickles for balance.

The Shrimp Cocktail was a runaway crowd favourite, judging from the number of empty cocktail glasses we see at the tables around us. We enjoyed the Duck Rilette and Pumpkin Soup for their richness. One serving of each is more than enough for sharing to leave room for other items.

No buffet is complete without a sweet ending. Desserts featured classics like:

Perfectly torched for that signature crackling top.

Warm, spiced apples under a buttery, crunchy topping.

A towering dessert with layers of ice cream, fruit, and whipped cream.

The showstopper here was the tableside flambé performance, where chefs prepared a flaming dessert, a Pancake with Cherry Compote drizzled and fired up with alcohol, right before our eyes, adding a touch of drama to the meal.

Overall, if you’re a fan of expertly grilled meats, generous portions, and a lively dining atmosphere, Grilled Out Sunday is a fantastic choice.

The quality of the ingredients, the skill of the culinary team, and the overall experience make it well worth the price, especially with the current promotions.
