[Review] BAM! Singapore Celebrates 10th Anniversary with New Modern European Concept and Menu

BAM!, a time-honoured fine dining establishment in Singapore, recently celebrated its 10th anniversary with the launch of a refreshed dining concept and menu. The restaurant embraces a modern European theme, promising an enhanced dining experience for its loyal patrons. Chef’s Choice starts at $178 per pax, leaving the choice of dishes entirely to the restaurant’s chef, with dishes inspired by the different seasonal ingredients that are meticulously sourced daily. Add $78 for sake pairing or $88 for wine pairing.

We were invited for a dinner tasting of the revamped menu and these were the items we sampled:

Blood Orange Salmon: Blood Orange, Panna Cotta, Yuzu Cream, Lemon Ganache
Chestnut Mushroom: Meringue, Chestnut, Raspberry Compote, Matcha Crumble

The Tasting Menu we sampled offered a selection of BAM!’s finest offerings, including the French classic appetiser Egg Mimosa and the seasonal delicacy Hand-dived Scallop when Scottish scallop was in season then.

Two standout dishes for us were the surf and turf combination of the Akaebi Shrimp and the the Quail with Foie Gras dishes. The former brought out the brine essence of the sea with its rich seafood flavours while the latter proved that two rich ingredients can still complement each other well.

The presentation of all the dishes was on point and delightful, bringing visual elements of surprise and also when you pop them into your mouth to experience an explosion of flavours.

Visually, the two dessert dishes were both winners. The Blood Orange Salmon dish cleverly utilised the texture and colours of the blood orange to mimick the look of a savoury ingredient to the teeth while the Chestnut Mushroom presented earthy flavours with sweet notes, unconventional for a dessert.

Beyond the culinary delights, BAM! prides itself on delivering impeccable service and we were impressed with the attention to details. The wait staff ensures a seamless dining experience, with glasses promptly filled and clear presentation of each course.

For those looking to elevate their dining experience further, BAM! offers alcoholic pairings, including sake and wine options tailored to complement their Chef’s Choice menu as well as ala carte selections.

All in all, BAM! delivers, as it has consistently done so for the past decade, despite the increasingly competitive F&B landscape in Singapore. Many new entrants come and go in the fine dining space, but BAM! is determined to be a mainstay.
