Chase the Dragon with Entrepôt’s Exquisite Lunar New Year Dishes at The Robertson House by The Crest Collection

Entrepôt, the signature all-day restaurant and bar at The Robertson House by The Crest Collection, invites Singaporeans to usher in the Year of the Dragon with a culinary experience that seamlessly blends tradition with a contemporary twist.

Helming the kitchen at Entrepôt is Chef Nixon Low, who describes his creations to be a celebration of the bold and vibrant flavours of Asian cuisine, combined with the sophisticated techniques of European cooking, all served in a communal and modern way. Trained in European techniques, the energetic and youthful Chef Nixon has spent years developing menus that blend Asian traditions with European artistry.

We were invited for a dinner tasting at Entrepôt and Chef Nixon and his crew definitely impress on presentation and the theatrical aspect of dining. He knows the young, social media generation well and his creations would appeal to their strong craving for culinary adventure, storytelling and adventure, on top of great flavours of course.

This Lunar New Year, Entrepôt offers two exquisite signature dishes that celebrate time-honoured traditions with a fresh perspective. From 1 to 29 February 29, families and friends are welcome to savour Entrepôt’s unique take on two traditional dishes, “Chasing the Dragon” Yusheng and Dr. Robertson’s “Pencai.”

“Chasing the Dragon” Yusheng

Entrepôt’s first Lunar New Year offering, “Chasing the Dragon” Yusheng, is inspired by Dr. Robertson’s inner circle secret drink. Dr J. Murray Robertson, the namesake of Robertson Quay in Singapore and The Robertson House, was a prominent Municipal Councillor in colonial Singapore days.

Chasing the dragon is a slang phrase of Cantonese origin from Hong Kong, referring to the smoking of heroin. No illicit drug was used in this dish of course. The name is tongue in cheek, drawing reference from the smoky flavours and the dry ice presentation:

This innovative dish features Chef Nixon’s own Robertson Chai-cured salmon, ikura, candied pecans, popping candy, dragon fruit, and plum dressing, all playfully nodding to the dragon theme.

To complement the dish, diners can enjoy “Chasing the Dragon” cocktail shots from Chandu, The Robertson House’s speakeasy bar. A non-alcoholic version of the cocktail is also available.

The “Chasing the Dragon” Yusheng comes in two sizes to cater to different group sizes. The smaller portion for 2-3 people is priced at $58++, which includes a bottle of Chandu’s “Chasing the Dragon” cocktail. The larger portion for 4-6 people is priced at $88++, inclusive of 2 bottles of Chandu’s cocktail.

For those who prefer to enjoy it at home, the takeaway option includes 3 teacups, a 90ml bottle of Chandu’s cocktail, and an informative recipe card with step-by-step instructions on how to toss the Yusheng.

If you are looking for something theatric with a storytelling aspect for your annual yusheng feast, this “Chasing the Dragon” Yusheng would be the one to go for.

Expect an added sensory feast as the Yusheng is served with incense-infused dry ice, adding a touch of theatricality to the auspicious Lohei tradition.

Dr. Robertson’s “Pencai”

Another signature dish this Lunar New Year from Chef Nixon is the Dr. Robertson’s “Pencai,” which boasts a rich ensemble of ingredients, including 5-spiced kakuni braised pork belly, napa cabbage, and charcoal-smoked duck.

This dish pays homage to Entrepôt’s history as a trading port for dried provisions.

The dine-in option for Dr. Robertson’s “Pencai” is priced at $388++ for a group of up to 6 people, while the takeaway option is available at $428++.

The takeaway package includes a recipe card detailing the ingredients used, a keepsake claypot, and an insulated bag for convenience.
