Pan Pacific Singapore introduces its new destination cocktail bar, PLUME – a celebration of the Panache of Singapore and the diversity therein. A homage to the vibrant indigenous birds of Singapore, the new bar is poised to delight connoisseurs through a multi-sensory journey of meticulously crafted cocktails that will quench your thirst for unique concoctions, along with delectable light bites to thrill the tastebuds.

Nested within the grand atrium of Pan Pacific Singapore, PLUME features a contemporary art deco interior that exudes elegance and opulence. Rich shades of maroon and emerald create a luxuriously warm and welcoming atmosphere, with gold accents for a lavish finishing touch. Staying true to its theme, PLUME features intricately textured monstera leaf walls, with an array of hidden birds that enhance the lush tropical experience.

Specially curated cocktails soar and take centre stage at PLUME, concocted in collaboration with cutting-edge bar consultants, Compound Collective and PLUME’s head mixologist, Ong Jun Han. Employing a range of exotic, innovative and familiar ingredients and techniques, the bar boasts a nuanced and sophisticated menu that guests are bound to flock to. The appetisers on the menu add another feather to PLUME’s cap – distinct Singaporean flavour profiles, culinary traditions, and inspiration from our island’s native birds come together to form the perfect cocktail accompaniments.

Cocktails

Indulge in a multi-sensory journey with PLUME’s signature cocktails, crafted to enchant even the most discerning palates. Drawing inspiration from 12 iconic native birds of Singapore, each drink reflects the unique characteristics of their respective avian muse, from their vibrant plumage, and distinctive habitat to the seeds and fruits that nourish them.

Take a sip of the Pink Necked Green Pigeon, a fruity concoction that takes inspiration from the Pink-necked Pigeon’s diet of fruits and fig leaves. The fig leaf infusion adds a delightful sweetness to the invigorating spritz, elevating it to a sensorial indulgence of the highest order.

For the adventurous at heart, the Asian Koel is a Negroni like no other. Savour the complex and refined flavour profile of this bitter, herbaceous cocktail, enhanced by a dash of exquisite sandalwood tree dispersion and premium, freshly brewed green coffee tequila, resulting in an alluring and earthy taste.

The Blue-tailed Bee-eater is for those with a more reserved palette, a refreshing drink that’s reminiscent of a gin sour. Infused with sage and saline, the cocktail is a light and breezy delight that will elevate your mood and transport you to a blissful realm.

An opulent libation, the Chestnut Winged Cuckoo is anchored with a rich dark rum elevated with tangy notes of Ceylon Arrak. Fruit and floral undertones further compliment the drink, garnished with a sprig of fresh mint, a slice of juicy orange, and a sprinkling of delicate pine nuts.

The pièce de résistance of PLUME is the Banded Woodpecker, a cocktail that sets your heart aflutter with its unconventional mix. Made with Green Ant Gin, this intriguing drink is served with a mist of oak moss, accentuating a citrusy and musky perfume that tantalizes your senses.

PLUME also offers non-alcoholic options such as Soar, a luxurious mocktail with the perfect amalgamation of refreshing jasmine, honeysuckle and a hint of honey.

Food

The menu also features a selection of appetisers, perfect to pair with your drinks. Further inspired by Singapore’s native birds and local flavours, Thorsten Killian, Executive Sous Chef of Pan Pacific Singapore, has created elevated iterations of popular Singaporean dishes.

Highlights include Bird Food, which consists of im-peck-ably crisp and light lotus root chips topped with an in-house made salmon floss and served with a side of whipped onion cream that provides the perfect snack for guests to nibble on as they imbibe.

For those seeking sumptuous and indulgent splendour, Perched Together offers chicken rendang croquettes nestled on a bed of crispy leeks, served with creamy rice and egg purée delicately encased within an eggshell.

Experience a luxurious twist on a beloved Singaporean classic with Bulbuls, featuring three tender wagyu beef satay skewers with refreshing cucumber-pineapple slaw and delectable peanut dipping sauce, leaving your senses enraptured by the tantalizing flavours.

The final jewel in the crown is Pink Flamingos, a luxurious Pani Puri dish, featuring a crispy fried dough ball stuffed with tiger prawn tartare, rich shellfish foam, and topped with crispy cracker and wasabi nuts for added texture.

Private Bar

For a more intimate experience, PLUME has a separate bar, The Nest, available for private hire making it a great venue for special celebrations and spending quality time with your closest friends.

PLUME is open daily from 5 PM to 1 AM on Sundays to Thursdays and till 2 AM on Fridays and Saturdays.
