Paying tribute to his mother this special occasion, Chef Sommelier Justin Wee presents a specially crafted cocktail inspired by a longan brew that was lovingly prepared by his mother as a child.
Showcasing a medley of intricate flavours and aromas, the gastronomic journey begins with a delightful amuse bouche, followed by the seemingly simple Organic Japanese Eggs that is elevated with the earthy nodes of peas, fresh nuances of elderflower, and richness of Oscietra caviar. The experience continues with Michelin-starred French Chef Anne-Sophie Pic’s signature Les Berlingots, pasta parcel filled with Comté, enhanced with a fresh blend of zucchini, ginger, and mint.
