Singapore’s iconic Chinatown district now has a new destination for food lovers and connoisseurs alike, as rooftop restaurant Eclipse opens its doors officially.
The new fine-dining restaurant is located at the rooftop of Chinatown’s landmark Yue Hwa Building, providing a bird’s eye view of the city’s skyline and Singapore’s beautiful downtown area. The top floor where the restaurant now sits used to be an office building and has been coverted into a restaurant to better make use of the space, with more staff working from home post-Covid.
The decor is amazing, with a high level of attention to details for a full thematic experience from the point you step out of the elevator to being seated and served your first drink and dish:
Eclipse is helmed by Chef Samuel Quan, who is inspired by a marriage of his roots in European cuisine and his own Asian background. The restaurant serves a multitude of east-meets-west fusion delicacies made from Chef Sam’s own favourite ingredients.
Eclipse Culinary Team
Prior to Eclipse, Chef Sam was leading the team at the Spanish-influenced restaurant Element on Tras Street located in Amara Hotel, where he was named Apprentice Chef of the Year at the 2017 World Gourmet Summit. He also had stints in the kitchens of Les Amis and Joel Robuchon, as well as the three Michelin-starred Aponiente in Spain.
To manage the day-to-day operations of Eclipse, Chef Sam is supported by a stellar team of culinary experts and veterans.
Head Chef Lee Jing Peng first ventured into the culinary world in 2013 as a Commis Cook with Tippling Club. Following that, he joined two-Michelin-starred restaurant Les Amis as a Pastry Cook, before moving on to the three-Michelin-starred Joël Robuchon as Demi Chef de Partie in Singapore.
In 2016, he returned to Tippling Club as Chef de Partie, rising through to ranks to eventually become Sous Chef within two years. Under the award-winning chef Ryan Clift, he has been a part of multiple culinary events across multiple destinations such as New Zealand, Hong Kong, Kuala Lumpur and Milan.
Star bartender Pranisa ‘Niza’ Treechanasin is the Head Barkeep at Eclipse, bringing tons of experience serving customers at top hotels in Bangkok along with her. She is renowned in the Thai scene as a top bartender who begun her career at popular restaurant 1881 by Water Library, before moving on to training new bartenders at Park Hyatt Bangkok as a Food & Beverage Specialist. Most recently, she was Head Barkeep for the Stella Bar at Capella Hotel Bangkok.
Eclipse is also the first concept by Bespoke Dining Club (BDC), Sam’s initiative which first began as a private dining service inspired by the joys of eating and the belief in close communication with his guests.
In the long run, BDC aims to become a diners’ club that links members to perks beyond just fine dining, but also other lifestyle aspects and adventurous experiences that they can enjoy.
