Why You Got To Try These 7 Fresh And Succulent Clam Dishes At One Michelin-Starred PUTIEN
Before PUTIEN was awarded the much coveted one Michelin star last year, it has already been a favourite among the locals.

It’s not hard to see why when the food served at PUTIEN evokes a heartwarming sense of familiarity, as though we are eating home-cooked food. Staying true to the culinary style in Fujian Province in China, the dishes are characteristically light, down-to-earth yet flavourful.

Now that the bamboo clam season has descended on us, there’s only more reasons to visit PUTIEN for a sumptuous feast of clams. Harvested from one of the world’s most renowned breeding grounds, the 6cm meaty and succulent clams are flown in to Singapore within a day to retain its freshness.

Available from now till 31 August, these seven clam-based dishes will be served at the annual Putian Clam Festival and here’s why you can’t miss out on them.

As you tuck into Steamed Putian Clam with Minced Garlic, you can savour the unadulterated taste of the clams without it being overpowered by the minced garlic. In fact, the clams are so good on its own you won’t realise you are helping yourself to another serving.

Specially flown in by air to Singapore two to three times a week, the clams are also undeniably fresh. Only the juiciest clams are served to customers during this season, lasting for about two to three months. Did you know that that the bamboo clams served are actually grown for two years before harvest?

Everyone can’t resist a little crunch – especially with their favourite bamboo clams. This Salted Spicy Putian Clam is not in the least bit greasy and is surprisingly light in its flavour. This brings us back to one of the signature flavours at PUTIEN where it is distinctively light and yet the dishes are palatable to our tastebuds at the same time.

Although many of us may shy away from fried food these days – for fear of packing on those calories, this is one dish we will order from the seasonal clam menu every time.

Baked Putian Clam Served on Hot Plate

Being one of the most popular clam dishes served at PUTIEN, its allure lies in the sea salt these succulent clams are laying upon – and of course the clams themselves. The way to enjoy this dish is to lightly dab the meat of the clam on both sides and you will be amazed at how refreshing (and not overly salty) it tastes.

It also helps tremendously that the clams used are some of the freshest we have come across. Manually harvested from the fertile soil off the coastal town of Putian in Fujian, China, these clams come from Duo Tou village.
Duo Tou mud is a type of rare black mud that is high in nutrients, very pure and contains no sand particles. Hence, the abundant supply of nutrients explains why the clams grow to be especially plump and meaty, with a remarkable length of 6cm.

This is a pairing that will never go wrong – clams and eggs are a match made in foodie heaven. Easily one of our favourite clam dishes at PUTIEN, Putian Clam Omelette is done just right. As you bite into the tantalising omelette, the slightly sweet taste of the eggs and savoury flavour of clams blend in perfectly well.

Anything stir-fried is a classic. The same goes for clams, especially in Stir-fried Putian Clam with Ginger and Spring Onion. This dish also saves you the effort of de-shelling as you can simply go straight for the chewy clams. We liked how the authentic taste of the clams were not lost in the use of excessive condiments and that it isn’t oily.

Health-conscious foodie would rejoice because all these dishes are certified to be lower in calories by the Health Promotion Board.

Who knew Chinese rice wine goes so well with bamboo clams? We lapped up this mouthwatering dish in no time and finished every drop of the wine because it’s too good not to. Yes, you can drink the wine, no doubt about that.

At the moment, Boiled Putian Clam Soup with Tofu Meatballs is hands-down our go-to comfort food. Nothing beats a piping hot bowl of soup that reminds us of home-cooked soup, which is also soul-warming. The meatballs in this soup are not your usual ones – as it’s made of tofu – and this brings a different kind of texture to the dish.

While these dishes are available from now till 31 August, the season may end earlier if supply runs out. All the more should you try these palatable clam dishes prepared in possibly all ways –  from boiling, steaming to baking – now!
