Procacci @ Customs House

Following a renovation of its interior in late 2014, Procacci Singapore, an italian restaurant located at the waterfront F&B enclave at Customs House, recently refreshed its menu.

The classic Italian establishment is a franchise of Procacci in Florence – established in 1885, the latter is a renowned restaurant and delicatessan famed for its gourmet truffle specialities, paninis and premium Marchesi Antinori Wines.

The first outside of Europe, Procacci Singapore made its debut in September 2010 at Customs House and has been going strong since. Procacci Singapore is helmed by Group Executive Chef Mark Richards who also oversees contemporary Italian-Japanese restaurant + lounge NUVO, Singaporean-Asian restaurant UJONG @ Raffles and the Lady M Confections chain from New York.

I was invited for a dinner tasting of some items on their new menu. These were the items sampled:

Fresh bread at the start of the meal
Antipasti – Capesante con Bagna Cauda (S$28): Scorched scallops, tomato relish, red radish, ‘Bagna Cauda’, herb sand
Primi – Pappardelle con Coda di Bue (S$32): Pappardelle di ‘Barolo’ braised oxtail ragout, white truffle oil
Secondi – Costolette D’Agnello (S$48): Sous-vide lamb chops, five spice crumbs, spinach basil & crushed peas
Super dig this lamb
Dolci – Tiramisu (S$16): Classic Italian coffee liqueur chocolate cake

The lamb chops, cooked to perfection, was particularly memorable. I like the rough texture on the outside from the five spice crumbs which will seep into the tender meat with each bite, giving a satisfying grind.

It’s the attention to details that make one dish stands out from another. I love the herb sand and the bagna cauda dip used to complement the scorched scallops for the antipasti. Again, the mix of rough, grainy texture grinding the soft, delicate scallop flesh was really delightful.

With a stunning view of the Marina Bay Promenade and an alfresco dining locale, under the stars, Procacci is worth considering for a romantic evening with that special someone.Priced at S$180++ per couple, the three-course meal includes a bottle of Prosecco Brut or Rosé. Strictly by reservations only.
