Two of Indonesia’s most sought after private island resorts, Nikoi Private Island and Cempedak Private Island, are heading to Singapore for a special one day culinary collaboration at Wildcard Singapore on 17 May 2026.
As part of Wildcard’s Sunday Test Kitchen series, the two island retreats will present a five course dining experience inspired by flavours and ingredients from across the Indonesian archipelago. Running from 11am to 12am, the takeover will give diners a rare chance to experience dishes usually only served on the islands themselves.
Leading the kitchen is Chef Dika, Food and Beverage Director of Nikoi and Cempedak, alongside Cempedak’s Head Chef Rozaq and one of Nikoi’s chefs. The collaboration marks a rare occasion where the culinary teams from both islands are cooking together outside Indonesia.
The menu highlights regional Indonesian influences and seafood driven dishes, including Gohu, a fresh lobster dish marinated in coconut milk, lime, chilli, shallots and basil, inspired by the raw seafood traditions of Ternate. Guests can also expect Balinese Harmony, featuring slow roasted ayam betutu paired with nasi campur and sambal matah. Dessert comes in the form of a spicy chocolate tart served with turmeric cream.
