Eat Spain, Drink Spain 2025 Kicks Off at St. Regis with Spanish Wine Dinner

The much anticipated Eat Spain, Drink Spain 2025 festival officially opened in Singapore with an indulgent Spanish Wine Dinner at The Astor Grill, St. Regis Singapore, on Friday, 12 September.

Presented in partnership with Tres Monos Distribution, the evening marked the start of more than 10 gastronomic events taking place across the city from now till mid-October.

Chef de Cuisine Angelo Sergio crafted a five-course Spanish menu, thoughtfully paired with wines selected to highlight Spain’s diverse regions.

The dinner opened with an amuse bouche featuring octopus tart, grilled vegetable sandwich, and crackling pork belly, paired with Bodegas Chozas Carrascal Cava Roxanne Las 2 Ces Brut.

This sparkling Macabeo-Chardonnay blend was one of our favourites of the evening. Bright, crisp, and refreshing, it spark off a fun start to the night.

Next came the appetiser of artisanal burrata with baked tomato and Cantabrian anchovy, paired with Bodegas Albamar Ceibo, Godello. The white wine from Valencia impressed with its elegance and minerality, cutting through the richness of the cheese while complementing the Mediterranean flavours.

The pasta course, Atavi smoked vortici with Taleggio cheese sauce and chorizo, was matched with Bodegas Morca Flor de Morca, Garnacha. This red was another highlight of the evening, with its depth and fruit-forward character balancing the smokiness of the dish beautifully.

For the main, we enjoyed chargrilled Wagyu bavette with buttery potato purée and veal jus, paired with Bodegas Juan Gil Blue Label, Monastrell, Cabernet Sauvignon, and Syrah. The bold, structured wine stood up well against the richness of the beef, delivering a harmonious pairing.

The cheese course, featuring Blue d’Auvergne and aged Manchego, concluded the evening with Bodegas Divina Proporción Platón, Tempranillo, Tinta de Toro, a classic red with earthy undertones that complemented the savoury and nutty notes of the cheeses.

Overall, the dinner highlighted the versatility and sophistication of Spanish wines, from sparkling cava to robust reds, each carefully chosen to enhance the flavours of the food.

The cava, the Valencia white, and the Garnacha were particular favourites, leaving a strong impression on the evening for us.

The Spanish Wine Dinner was just the beginning of this year’s Eat Spain, Drink Spain campaign, jointly organised by Spain Trade and Investment (ICEX) and the Spanish Agricultural Ministry (MAPA). Running from 1 September to 15 October 2025, the festival features more than 10 events across Singapore, including wine tastings, cooking demonstrations, and a Galician Day celebration at At-Sunrice GlobalChef Academy.
