This National Day season, Sushi Express is fusing the bold, beloved flavours of Singapore’s zi char with the finesse of Japanese sushi. From 1 July to 31 August 2025, diners can enjoy the Zi Char Shiok creations—an exclusive, limited-edition trio designed in collaboration with local competitive eating icon, Zermatt Neo.

Blending comfort food nostalgia with premium ingredients like Norwegian salmon, Argentine prawns, and succulent abalone, the new series is a celebration of local taste reinvented with a Japanese twist.

Zi Char Favourites, Reimagined in Sushi Form

Developed by Sushi Express’ in-house chefs and Zermatt Neo, each dish in the Zi Char Shiok series puts a modern spin on iconic hawker dishes:

  • Salted Egg Abalone: Grilled abalone on shell, draped in rich salted egg sauce, topped with crispy bits and red chilli slices for extra punch.
  • Sweet & Sour Fish: A hanamaki-style roll featuring salmon-wrapped sushi topped with swordfish cubes, bell peppers, pineapple, and onion—all balanced with a sweet and tangy sauce.
  • Cereal Prawn: Argentine prawn grilled in garlic butter, lightly coated in condensed milk to hold the cereal, and finished with crispy cereal, red chilli, and parsley for that unmistakable zi char aroma.

Each dish is light, refreshing, and packed with umami, paying homage to Singaporean food culture while letting the premium seafood shine.

To mark the collaboration, Sushi Express is hosting a Big Eater Challenge open to the public every Wednesday from 9 July to 13 August 2025. Participants will go head-to-head to beat Zermatt Neo’s benchmark—and those who do will eat free and walk away with $500 in cash.

Challenge Details:

  • Dates: Wednesdays from 9 July to 13 August 2025
  • Sessions: 2:30PM & 4:00PM (arrive 20 minutes early)
  • Locations: Century Square, Westgate, PLQ Mall, Waterway Point, IMM, White Sands
  • Eligibility: Open to those aged 18 and above

  • Eat 20 plates or more: 20% off
  • Eat 60 plates or more: 60% off
  • Eat more plates than your height (in cm): Free meal!
