[Review] Modern French Elegance with a Mediterranean Twist: Maison Boulud’s Refreshed Menu Continues to Delight the Senses

Daniel Boulud is back at Marina Bay Sands.

After 13 years of operations, DB Bistro & Oyster Bar by Daniel Doulud was closed for extensive renovation and reopened in Feburary 2024 as Maison Boulad.

A concept by the acclaimed French restaurant by celebrity chef Daniel Boulud, best known for his one-Michelin star eponymous restaurant, Daniel, in New York, this waterfront restaurant, spanning two floors, offers a soulful blend of seasonal French cuisine with Mediterranean influences, all served in an elegant setting designed by the award-winning Joyce Wang Studio.

Maison Boulud’s ambience is a harmonious blend of rustic charm and coastal opulence, evoking the timeless allure of the French Riviera. For both tourists and locals alike, two-storey restaurant boasts a magnificent view of the Singapore skyline, making it an ideal spot for both intimate dinners and celebratory gatherings.

For those familiar with DB Bistro, Maison Boulud elevates the experience with a more refined, seasonally driven approach.

Recently invited for a lunch tasting, we had the pleasure of sampling a selection of dishes from their refined à la carte menu.

Tuna Niçoise
A modern twist on the classic, this dish features succulent tuna, crisp crudité, basil pesto, olives, and a runny egg, all tied together with a bright lemon dressing.

The balance of textures and flavours was delightful, presenting a fresh dish that is light yet satisfying.

Pâté en Croûte
A luxurious starter, this pork Ibérico and foie gras terrine is enriched with Armagnac, apricot, and pistachio, encased in a delicate pastry.

Rich and velvety, this is a dish that will appeal to French cuisine purists.

A nod to Boulud’s famous DB Burger, this indulgent creation layers Black Angus beef, pork belly, caramelised onions, Morbier cheese, arugula, and cornichons on a fluffy bun.

If you loved the original, this sinfully delicious upgrade will not disappoint and is a must-try.

Sea Trout
Perfectly cooked and accompanied by Brussels sprouts, marmalade, and a lemon chicken jus, this dish presented a balance of sweet, tangy, and savoury notes.

Red wine-braised free range chicken served with bacon, mushroom and gnocchi.

Desserts

Durian “Royale” Soufflé
A bold yet brilliant creation, this Mao Shan Wang durian soufflé is paired with coconut sorbet. The seemingly disparate ingredients, unexpectedly fuse well together to highlight Singapore’s beloved king of fruits in a sophisticated way.

It seems strange to disturb a durian dish as light and fluffy, but this was indeed the case. A must-try.

Baked Alaska for Two
A classic theatrical dessert featuring pineapple and coconut sorbet, flourless sponge cake, this is served tableside with a flambéed Jamaican rum finish.

The contrast of warm and cold, along with the tropical flavours, made this a memorable finale.

Ricotta gelato, Sicilian pistachio, chantilly, lemon gel and meringue. This is so beautiful to look at.

No French meal is complete without these buttery, shell-shaped cakes, served fresh from the oven. A simple yet perfect ending.

Overall, Maison Boulud presents an elevalated, yet approachable French cuisine, a notch up from DB Bistro. Service was impeccable in a beautifully designed interiors.
