Merci Marcel’s newest outpost at Robertson Quay has officially opened its doors, offering an elevated French dining experience crafted in collaboration with renowned French chef, Chef Bruno Ménard, known for his previous three Michelin-starred L’Osier restaurant in Tokyo among his many other accomplishments. In France, the town of Saint-Cyr-sur-Loire even named a street after him — Rue Bruno Menard.
Located in a beautifully restored 19th-century warehouse, the riverside restaurant combines French Riviera charm with Singapore’s vibrant waterfront lifestyle.
Chef Bruno Ménard, with over three decades of culinary expertise across Asia, has curated a menu that seeks to celebrate French culinary heritage while incorporating contemporary touches.
During a recent media tasting, we had the opportunity to sample a selection of dishes from the dinner menu, presented by Chef Bruno himself and the culinary team at Merci Marcel in bite-sized portions, served in omakase-style platters. This is not available on the menu, but it would be amazing if they offer it to get a sampler of everything!
Beetroot Tartar ($14)
A refreshing dish featuring finely diced beetroot, pink peppercorn, sesame oil, and crispy string potatoes. This was one of our favourites for its intense flavours to tease the palate at the start.
Crab Croquettes ($15)
Crispy on the outside with a creamy crab filling, served with tomato-horseradish sauce and chili crab mayonnaise.
Rillons de Touraine ($18)
Slow-cooked pork belly confit paired with curly salad, poached egg, and whole-grain mustard sauce. The combination seems disperal, but they all go well together.
Cévennes Onion Soup ($24)
A rich, velvety soup from southern France, topped with pan-seared foie gras and truffle Chantilly. Another of our favourites, the richness of the foie gras marries harmoniously with the equally richly flavoured soup to deliver a strong kick.
Wild Porcini Ravioles ($27)
Delicate French dumpling pasta filled with cheese, served with homemade savoury granola. The latter adds an extra crunch to the chewy, soft texture of the dumpling pasta.
Roasted Chicken Breast ($30)
Tender chicken breast accompanied by tarragon-scented tagliatelle and a tangy tomato-raspberry vinegar sauce. This dish may look simple presentation-wise, but it has a rich, diverse flavour profile, prepared with meticulous attention to details.
Pan-Roasted Prawns ($32)
Succulent prawns served with creamy coconut risotto and Modras curry sauce. The sauce is really good and we savoured it the last drop.
Poached Snapper & Scallop Quenelle ($38)
A refined dish featuring snapper, scallop mousse, mushrooms, leeks, mussels, and Normandy sauce. This is light and fluffy and will appeal to those who prefer a lighter main.
Grilled Ribeye Steak ($69 for 300g, $120 for 600g)
Grain-fed beef with smoked Kampot pepper butter, crispy string potatoes, and green herbs.
Coconut Spoom ($14)
A light coconut foam with caramelised coconut flakes, rice puffs, and mini churros.
Floating Island ($14)
A classic French dessert with meringue floating on vanilla and lemon custard, sprinkled with pink pralines. This is almost too pretty to eat!
Chocolate Espuma ($15)
Airy chocolate mousse served over locally made vanilla ice cream with a cocoa nib tuile.
The Rum Baba ($17)
Served with passion fruit glazing, crunchy sugar Chantilly and Double-Cask Plantation Rum.
Overall, Chef Bruno and the culinary team at Merci Marcel at Robertson Quay has curated a modern French dining experience that blends the old and the new, reinterpreting classics with modern creations. Every dish presents a multitude of flavours, presenting something unexpected and delightful. Prices are pretty reasonable too for the quality.
Ambiance wise, Merci Marcel Robertson Quay features an outdoor terrace with river views, making it an ideal spot for intimate dinners or celebratory gatherings.
As with all Merci Marcel restaurants, this lastest outlet features a solid wine list, including prestigious French labels, such as Saint-Julien 2006 from Château Léoville Barton and Nuits-Saint-Georges 2021 from Domaine Jean Chauvenet, curated to complement the menu.
