The restaurant recently debuted an all-new à la carte menu in September, led by the talented Group Executive Chef and Partner, Jitin Joshi.
Known for his global expertise in Michelin-starred kitchens and luxury dining, Chef Jitin brings his disruptive flair to the Revolver family.
The dishes are divided into “Small Bullets” and “Big Guns”, much like Spanish tapas with small plates and big plates, perfect for sharing in a large group to get a bit of everything.
A menu highlight at Revolver is their “Kulchette”, a Revolver invention that can best be described as a progressive rendition of a flatbread inspired by the likes of the traditional Indian kulcha, Turkish pide, and Napoli pizza. This warm, versatile staple, served at the end of every meal, can be stuffed with cheddar and Parmesan cheeses or served plain and topped with everything from white truffles to scrambled paneer.
I love Indian food for their rich flavours and abundance use of herbs and spices, making even the most simple vegetarian ingredients extremely tasty. As such, I was really looking forward to the dinner tasting at Revolver and it did not disappoint.
Here is a taste of what we experienced during a recent dinner tasting for two.
Starting strong, the Boneless Chicken Wings with Yuzu Aioli ($20) delivered crispy perfection paired with a tangy twist. The deboned wings make it an easy eat for lazy eaters, with everything packed compactly into a single skewer.
Vegetarians will relish the Fresh Delhi Paneer with Winter Spinach ($20), a nod to Indian flavours elevated with finesse, taking the humble paneer and bringing it to another level with skillful seasoning and presentation.
Meanwhile, the Charred Fennel with Coconut Moilee ($18) offered a smoky sweetness balanced by a velvety coconut sauce, making it a surprising hit. It looks ordinary and the ingredients are simple, but the flavours are complex and delightful.
For something heartier, the Spice Rubbed Cauliflower with Shiso Salad ($28) showcased charred, spiced cauliflower paired with refreshing shiso greens. This was another of our favourites.
The Hamachi Collar with Kashmiri Chili Dust ($48) had the perfect balance of smoky, fatty richness and a kick of Kashmiri chili. When you cut the meat apart, you can see the inside is still moist.
Meat lovers will enjoy the Stag Valley Farms Lamb Chop with Creamy Rogan Josh, a dish bursting with robust spices and creaminess, grilled and presented beautifully. The gravy is good to the very last drop.
The Kulchettes ($16 each), a Revolver specialty, is a must-try. We tried the chickpea and spiced potato, as well as the butter chicken versions. These are perfect comfort food fillers at the end of the meal to ensure everyone goes home with a full stomach.
Ending on a sweet note, the Revolver Signature Brioche with Creme Cru ($18) paired buttery brioche with rich crème anglaise, while the Charoli Yoghurt with Rose Honey ($18) added an Indian touch with its unique blend of nutty and floral notes.
Overall, with its open-fire grilling techniques and South Asian-inspired menu, Revolver is doing something different along the highly competitive stretch of dining establishments along Tras Street. Judging from the packed restaurant on a weekday night, they have the formula right and the diners are streaming in.
The new à la carte offerings represent a natural evolution from their fixed, tasting menu, allowing diners to tailor our dining experience while retaining the restaurant’s signature boldness.
