[Review] SUSHISAMBA’s First Asia Pacific Outpost in Singapore at Capitol Tower

SUSHISAMBA has officially opened its first Asia Pacific location, setting up shop on the 52nd floor of Capital Tower, the corporate headquarters of bigwig companies like GIC and Capitaland, in Singapore’s Central Business District. The global premium restaurant chain, renowned for its unique fusion of Japanese, Brazilian, and Peruvian cuisine, offers a multifaceted dining and entertainment experience against the backdrop of breathtaking cityscape views.

Owned and operated by Sunset Hospitality Group, a prominent lifestyle hospitality company with over 80 venues across 22 countries, SUSHISAMBA Singapore marks the Group’s latest venture.

The 12,000-square-foot venue boasts floor-to-ceiling windows, offering 360-degree views of Singapore’s skyline and surrounding waters.

The space, designed by KokaiStudios, features a striking 3D printed bamboo installation comprising 9,000 pieces, along with lush greenery and comfortable booth seating.

At the heart of the restaurant is a theatre kitchen, equipped with a robata counter, charcoal grill, Josper oven, and a sushi counter with a dedicated Tsukiji Seafood Market corner. It adds to an already vibrant, buzzing atmosphere at the restaurant as you witness your orders getting prepared fresh.

The menu offerings at SUSHISAMBA includes sushi rolls, sashimi platters, seviches, and charcoal-grilled anticuchos, all crafted under the culinary direction of Chef Kyung Soo Moon and Executive Chef Paul Hallett.

Chef Kyung emphasises that SUSHISAMBA is about “fun dining,” with dishes designed to be shared among friends in a lively atmosphere.

In addition to the food, the venue offers a dynamic cocktail program curated by renowned Italian mixologist Giancarlo Mancino. The restaurant’s ambiance is further elevated by an eclectic mix of Afro House, Brazilian, and Latin music, complemented by performances from Samba dancers and percussionists.

For those seeking a more intimate experience, the restaurant offers three private dining rooms, each with its own unique ambiance and stunning views. The iconic SAMBA ROOM, located on the mezzanine floor, provides a chic lounge setting perfect for enjoying creatively crafted cocktails.

We were invited for a dinner tasting and below were the items we savoured, paired with cocktails.
