Madison’s at Pullman Singapore Hill Street: New York Deli-style Comfort Classics and Quirky Cocktails

Nestled within the vibrant halls of the newly launched Pullman Singapore Hill Street, Madison’s seeks to bring forth the energetic spirit of New York City, paying homage to the deli culture, with its modern dining concept, blending comfort classics and innovative cocktails.

Stepping into the restaurant, the decor and ambiance would make you feel like you are whisked away into old New York. We were invited for a dinner tasting with drinks on the side and these were the items we sampled:

Mariachi Margarita ($24) – classic margarita combing blanco tequila, smoky mezcal and jalapeno slices. Shaken with pineapple and celery juice to present a balance of feisty and fresh.
Cactus Mojito ($23) – refreshing mojito with a herbal and earthy twist, brought forth by muddling nopales (cactus paddles) with shrubs of mint, citrus and sugar. Topped with rum and club soda, served with a mint sprig for garnish.
Smoked Chicken Waldorf Salad ($24) – Madison’s version is served with a bed of baby romaine, celery and granny smith apple slices tossed in a creamy, lemony dresing. Shreds of smoked chicken strips, roasted grapes, walnut and parmesan are then laid atop.
Reubeni Reubeni ($36) – a rendition of the classic Reuben that stacks corned beef and sauerkraut, its key difference is the use of dill relish and Madison’s Reuben dressing to give a tangy profile, cutting through the rich meat. Wedged between slices of Toasted Seeded Wheat bread by Starter Lab Baker.

Mad’s Fried Chicken ($20) – classic American fried chicken done the Madison’s way with three pieces of chicken thigh that are first marinated overnight in spiced buttermilk. Each piece is battered a seasoned coating then deep-fried upon order and served with a side of Chipotle Coleslaw.
Madison’s Mac & Cheese ($18) – elbow macaroni smothered in orange cheddar cheese, topped with a herb crumble made using house-grown thyme and parsley.
Signature NYC Peanute Butter Cheesecake ($18) – Madion’s version of the iconic New York dessert folds peanut butter into the classic cream cheese batter. Served piled atop a crumble base, with a finishing drizzle of caramel and crushed peanuts.

Verdict?

We particularly enjoyed the Reuben sandwich in all its sinful glory of strong, saltish flavour and greasiness. Likewise for the equally sinful peanut butter cheesecake.

Madison’s embraces the quintessential flavours of New York, seeking to redefine American favourites with a creative twist. If you enjoy a deli meal for comfort food and is seeking for an elevated experience, Madison’s would fit the bill. This place is great for those looking for a quiet place to do some light reading or a casual catch-up with friends while enjoying light bites with a cup of tea or coffee in the day or cocktails in the evening.
