Refreshed Menu At Spice Brasserie, PARKROYAL on Kitchener Road – Buffets featuring Sin-Ma Flavours, More Crab Dishes Including Kam Heong Crabs

Inspired by the colourful heritage of Singapore and Malaysia, the all-day-dining restaurant, Spice Brasserie at PARKROYAL on Kitchener Road recently unveiled some new signature dishes and perennial Singapore and Malaysia favourites in creative and modern interpretations in three tantalising buffet menus, all at nett prices for great value. Here are the highlights.

Sin-Ma Flavours

Wednesdays to Fridays (Lunch) | Price: SGD25nett per person

Spice Brasserie Executive Sous Chef Patrick Ooi is proud to bring back treasured flavours from his hometown, Penang, using family recipes that have been passed down through generations, along with delectable favourites here in Singapore.

In his rendition of Penang Assam Laksa, key ingredients such as mackerel fish, pineapple chunks and ginger torch
flower is used to create this flavoursome dish that is not only sour, lightly spicy, but also with a hint of sweet and savoury.

In his rendition of the Braised Black Vinegar Trotter, a traditional Chinese dish known for its health benefits and often served as confinement food, the chef chose the use of Gula Melaka in his recipe to bring out a richer taste and aroma, as well as to balance the sour and sweetness of the dish.

Watch chefs in action as they stir-fry a plate of Hokkien Fried Prawn Noodles that comprises of yellow and thick vermicelli noodles, married with a broth of pork bones and prawn heads, served on Opeh leaf, including the sinful pièce de résistance – crispy fried pork lard.

Ranking high on the list of old-school delights, the chef’s take on the Hainanese Pork Chop is coated with crushed cream crackers, deep fried and served with three gravies on the side – Hainanese Curry Gravy, Hainanese Style Ketchup Sauce and Braised Soya Gravy.

Desserts and drinks like Bur Bur Cha Char and Rootbeer Float are available for add-on too.

Lunch 茶


Saturdays and Sundays (Lunch) | Price: SGD35nett per person

In just one seating and at one price, indulge in the brand new Lunch 茶 (pronounced as Lunch-‘cha’) buffet that promises an allyou-can-eat buffet plus a dainty afternoon tea set filled with an assortment of Asian desserts, complete with a selection of tea.

Delight in a plethora of Malaysia and Singapore-inspired dishes that include a DIY Popiah Station, Penang Char Kuay
Teow and Ice Kacang while sipping on a cup of freshly brewed Teh Tarik pulled at the live station.

Round up your meal with a selection of afternoon tea set that features popular creations like the Cempedak crumble, Portuguese Durian Egg Tart, Ondeh Ondeh, Seri Muka Pulut Hitam and more.

Asian Street Food Dinner Buffet

Wednesdays to Sundays (Dinner) | Price: SGD68nett per person

Enjoy a refreshed Asian Street Food spread that encompasses the best of Spice Brasserie, topped with all-new Asian street finds from the region and an expanded array of fresh seafood delights.

With a longstanding reputation for its selection of fresh seafood, don’t miss out on Spice Brasserie’s all-time favourite Chilli Crab with Mantou and the debut of three new crab flavours.

The popular Malaysian style Kam Heong Crabs promises an irresistible fragrance and seamless blend of flavours from the spices used, like dried shrimps, curry powder, curry leaves, shallots, garlic and chilli. The Mongolian sauce crab is lightly spicy, similar to that of black pepper sauce except that it has a creamy note. Joining the lineup is the rich Tom Yam Crab, conjuring familiar flavours from the Land of Smiles.

Signature creations such as the BBQ Black Char Siew, Banh Mi Crispy Pork Belly, Hand-Tossed flavoured Naan and Teppanyaki Ice-creams are made to order at the live stations.
