Opening its door in May 2022, LUCE by Davide Giacomelli was launched at InterContinental Singapore following a global hunt for Singapore’s next culinary superstar by the luxury heritage hotel.
Responding to a culinary casting call that attracted the attention of over 200,000 hopefuls, Davide’s passion for Italian cuisine and thirst for adventure saw him beat almost 120 other chefs from around the world.
The prize?
A namesake concept and a blank canvas on which to bring his ‘bistronomic’ (described to be a blend of bistro and gastronomic) vision to life.
The Italian native boasts over 13 years of culinary experience, including at several Michelin-starred restaurants across Europe. Chef Davide will be responsible for the daily operations of the hotel’s flagship restaurant, leading the team to offer an authentic Italian dining experience. Meaning ‘light’ in Italian, LUCE seeks to hine a spotlight on fresh, local ingredients, with a seasonal à la carte menu that will be refreshed on a quarterly basis.
Chef Davide is joined by Artem Viglione, who serves as Restaurant Manager. With a deep-rooted passion for the F&B industry, Artem has experience across Italy, the United Kingdom, Australia, and Singapore, where he has previously held roles at the likes of LAVO Restaurant at Marina Bay Sands and Da Paolo Restaurant & Bar at Dempsey.
We were invited to a dinner tasting at LUCE and these were the items we sampled:
Each course came with a paired wine, carefully curated by Chef Davide and his sommelier. We found the flavours of the presented dishes to be quintessentially traditional Italian fares, packaged with a modern look. I supposed this is the bistronomic approach that Chef Davide is looking to share – something that is seemingly casual like a bistro dish and yet also a gastronomical treat. The modern interpretation of the Tiramisu, the LUCE-misu is one fine example.
