Sofitel Singapore Sentosa Resort & Spa teases your tongue with fresh dining concept The Cliff

You won’t have to romanticise about the idea of enjoying an Italian meal in captivating cities such as Rome or Milan in Italy. Not anymore, as Sofitel Singapore Sentosa Resort & Spa has recently unveiled its fresh (and latest) dining concept – The Cliff.  

At the heart of its culinary philosophy lies an Italian adage, il dolce far niente. Simply put, it refers to the pleasure of doing nothing or in this case, to completely enjoy and savour a moment.

Be sure to experience this way of life, beyond the tongue-teasing cuisine at The Cliff; where everything else takes a backseat amidst the serene setting, spectacular view of the South China Sea and more.

Travel through Italy with your tastebuds

From April onwards, diners can expect to embark on a gastronomic journey through Italy as Chef de Cuisine Simone Fraternali creates signature dishes indigenous to each region, starting with his home province of Emilia Romagna.

The dynamic degustation set menu brings to the table a sense of novelty, spontaneity and surprise that simply keep diners on the edge – and wanting more.

Starters: Grilled octopus with orange potato and salmoriglio (S$23).

If you are seeking for an element of surprise, The Cliff is slated to be a weekly affair for you and your bunch of foodie friends. Beginning from April, gourmands are in for a treat every Thursday as they witness the culinary stroke of genius by Chef Simone in ‘An Italian Affair with Chef Simone’.

In this weekly menu, the masterful chef draws inspiration from just about anything. It runs the gamut from seasonal ingredients, personal experiences or even spark of the moment; but one thing’s for sure, the dishes are expertly crafted with nothing short of passion and freshness.

Pappardelle with pork ragout and rosemary ($24).

Indulge in a myriad of mains, piquant pizzas and pastas all made from scratch

Signature Pasta: Spaghetti ‘Alla Chitarra’ with smoky lobster (S$42).

Diners looking to satiate their fix for pasta won’t want to miss this classic at The Cliff. The unique texture of the spaghetti – courtesy of the chef making the spaghetti with a Chitarra – gives the signature dish a more unique texture and an even more satisfying bite.

As you tuck into the generous portions of lobster imbued with a smoky essence, you cannot help but to relish the sapid flavour of the fresh seafood.  

Smoked scamorza, balsamic Kurobuta pork jowl, caramelised onion, mushroom Pizza (S$26).

Pizza lovers will also leave all self-restraint at the door, especially upon the sight of such delectable delight and the aroma wafting through the air.

The unusual pairing of balsamic Kurobuta pork jowl and caramelised onions simply makes for a divine combination, which leaves us wanting more after every bite. While the pizza is crispy on the outside, it is chewy on the inside.

Fior di Latte, mascarpone and truffle cream Pizza (S$32).

Truffle, anyone?

By far, this truffle-pizza mashup has got to be one of the best pairings. Pizza fan or not, truffle lovers will definitely rejoice upon this Fior di Latte, mascarpone and truffle cream Pizza.

Once you sink your teeth into such layered goodness, it oozes with a robust truffle flavour so deeply etched in your mind you crave for another. Unlike the usual pan pizzas, these have a thinner crust, a lighter taste yet not compromising in its flavour; and less greasy (for health-conscious foodies out there).

Slow cooked pork chop with baby carrots and morello cherries jus.

As for this Slow cooked pork chop with baby carrots and morello cherries jus, Chef Simone has certainly nailed it. The pork chop was done just right, without coming off too hard or tender and the morello cherries jus delights your palate as it brings out the umami taste of the pork chopeven more.

Dessert is never an afterthought at The Cliff

While desserts are usually served after our main courses, they aren’t necessarily paid attention to less.

Classic Tiramisu – an all-time favourite (S$14).

Diners with a sweet tooth will be drawn to the Classic Tiramisu like a moth to a flame. The quintessential coffee-flavoured cake may seem like a no-brainer but you will see all the reasons to end off your meal on a perfect note with the tiramisu, after having a taste of it.

Besides its full-bodied coffee and cocoa flavour that are well-complemented by each other, the exquisite dessert offers an ethereal taste without coming off as an overkill in its sweetness.

Gianduia mousse with white chocolate and espresso cream (S$12).

 

If you like the sound of hazelnut more, then the elegant Gianduia mousse with white chocolate and espresso cream will be a real palate pleaser. The rich hazelnut chocolate flavour shines in this sweet treat, with a smooth and silky texture you pause to relish every bite. This particular dessert is poised to strike a chocolate connoisseur’s fancy.

Whether is it a corporate luncheon, family gatherings or special dates with your significant other, The Cliff is perfect for any occasion, especially given its sophisticated setting.
