For the month of July, Four Seasons Hotel Singapore transformed its One-Ninety Restaurant to celebrates a Middle Eastern Food Festival. Guests will be treated to Middle Eastern cuisine by Chef Adnan Al Masri, a visiting chef from Four Seasons Hotel Doha.
I was invited to a tasting hosted by Chef Adnan personally and he shared on how he curated each of the dishes, his own heritage and cooking influence, as well as his personal favourites.
Chef Adnan hails from a mountainous area of the Damascus country side in Syria, an area that benefits from a river and climate which produce fruits, vegetables, herbs, olives and all kind of condiments. This allowed him to distinguish and relish the taste of fresh and organic food from an early age.
My exposure to Middle Eastern food came from my travels to Turkey and Israel. If it’s limited to Singapore, this will be confined to just hummus, pita and kebab, which seriously does injustice to the rich offerings available from Middle Eastern cuisines.

The special Middle Eastern courses are priced from s$52++ per person for lunch; from S$64++ per person for dinner and brunch is available on Sunday from S$72++ per person.
For both lunch and dinner, guests will get to enjoy the Middle Eastern themed Mezze and Desserts from the buffet table with a choice of entree by Chef Adnan.
The entrees are divided into three selections – charcoal grill; home style favourites; and claypot delights. To savour something more unique, go for the home style favourites for some of Chef Adnan’s home recipe which were passed down from his mother’s kitchen.
The grilled entrees are all served with grilled vegetables, Bewas salad and Antakly Bread while all home style entrees are served with saffron rice or vermicelli rice.
I enjoyed the meal very much, although most of the time, I am not too familiar with what I am eating, having very little exposure to Middle Eastern cuisine. I like that there is an abundance use of vegetables, nuts, fruits and dairy, staples for a healthy and wholesome diet. A lot of the menu items seem to be slow-cooked, a laborious process.
