A different Christmas dining experience at Beijing No. 1 @ Marina Bay Sands

If you looking for a different Christmas dining experience beyond the usual turkey, ham and log cakes, why not consider dining at Beijing No. 1 at Marina Bay Sands?

The restaurant is helmed by two-starred Michelin Chef,  Executive Chef Shi Wei Dong, who has over 40 years of experience in the Chinese culinary world. The kitchen specialises in double-boiled Chinese soup and other exquisite Chinese aristocrat cuisine (官府菜), specifically Tan Family Cuisine (谭家菜). Tan cuisine is prepared mainly by braising, stewing, simmering and steaming.

They have crafted a special Christmas sampling menu for guest to try out some of their signature dishes as well as localised festive dishes, all plated beautifully and served, western-style:

Assorted Cold Appertisers
Sweet andSour Pork Ribs Marinated with Herbs
Cabbage Roll with Mango in Chili Vinaigrette
Tossed Jellyfish with Chinese Aged Vinegar and Garlic
Sautéed Diced Wagyu Beef with Asparagus
Pan-Fried King Prawns with Ginger Sauce
Bird’s Nest Egg Tart
Chilled Mango Cream with Sago and Pomelo

Rachel and I had the good fortune to try out their special Christmas menu and were thorough impressed, especially with the soup. The chef shared that malaysian kampong chicken, old duck and indonesian pig trotters were used in the soup. These were cooked till the flesh comes off the bones. A secret stock is used, together with scallops and a special kind of Chinese ham. Fish maws were added because they have bubbles to trap the flavours. Dried abalones were used to give an extra crunch. It takes around 12 + 5 hours to prepare the soup.

The Beijing No. 1 Christmas Dinner Menu is available at S$98++ per pax, with a minimum of 2 pax, from 24 December 2014 to 1 Januaray 2015. Call for reservations. 

I would love to try more items off their regular menu, especially their specialty Tan Family Cuisine. The localised items were pretty good too, but it’s their specialty which sets the restaurant apart from other Chinese restaurants in Singapore.

The soup was so good that Rachel and I were still talking about it after we left the restaurant. It was possibly the best Chinese soup we had sampled in Singapore.
